To preserve maximum freshness and aroma Jean-Jacques starts the fermentation in stainless steel before transferring the wine into oak barrels and this has produced a bleached-straw in colour with a nose of mirabelle plum, bergamot and dried apricot. This Pernand-Vergelesses is full and buttery in the mouth as the fruit and minerals combined with a slight oakiness. (12 x 75 cl)

Founded in 1529 by Jean Girard, this is one of Savigny's oldest domaines. Today the domaine is run by Georges Girard and his son, Philippe. The domaine has 15 hectares of vines in Savigny, Pernand-Vergelesses and Aloxe Corton. Grapes are only partially de-stemmed and then undergo a relatively short cuvaison of around 12-13 days in cement vats. The wines then spend between 12-18 months in oak casks before being given a light filtration prior to bottling. (12 x 75 cl)
