The calcareous clay (Kimmeridge clay) is another soil preferred for Pouilly Fume.
From the peak on the side overlooking the Loire to the Roman Road, the southwest facing circular shaped plots of -Les Comets- produces a generous wine: whose unique aroma is reminiscent of orchard and gooseberry fruits.
The main part of the production comes from the flint hillside of Saint-Andelain. This soil is rich in flint, which stores up the days heat and then reflects it at night. In this way we obtain maximum ripening for complex, typical -pierre a fusil wines which display more concentration of aromas (24 x 37.5 cl)

In fact, it deserves to age in order to best fulfill its subtleness.If you have the patience to bottle age it for a dozen years you will be even more surprised! Along the Roman Road a rest stop for carriages once existed known as l'Arret Buffatte. Travelers and horses could take a breather, refresh themselves and eat there. The vines present on this site allow us to produce the cuvée honoring its name -l'Arrêt Buffatte. Situated in a geological cirque at the height of the best hillsides with southwest exposure and overlooking the Loire River, the 35 year-old vines of l'Arrêt Buffatte benefit from all the potential of the Kimmeridgian marls.This makes it possible for us to produce wines for aging of a large aromatic complexity with scents of white flowers and passion fruit. In this exceptional winegrowing region, just two hours south of Paris, Carmen and Alain have patiently put together their estate over the last fifteen years. Building up a superb collection of plots on some of the finest slopes of Pouilly-sur-Loire their approach respects the soil and the environment of these vineyards that face the Loire. From vineyards on the typical limestone clay hillsides of the Pouilly vineyard , these wines draw their strength from the old local earth. Taking a bit longer to peak than limestone hill wines, they express their full strength after one year of maturing. Aromas of white flowers are followed by nuances of blackcurrant bud, finishing with clear mineral airs.
