These conditions are perfect for the cultivation of Parellada, Macabeo and Xarel-lo, the three grape varieties used to produce ‘Metodo Tradicional’ Cava. This sparkling wine is a blend of 40% Parellada, 30% Macabeo and 30% Xarel-lo. Using these light and fruity grapes has produced a wine showing a wealth of aromas, most of which are provided by the Parellada variety.
