One wild, windy night as the intrepid travelers were crossing Wollombi Brook, misfortune struck. Cockfighter, the lead horse, became bogged in river quicksand and despite all efforts, drowned. A fateful night that gave birth to the legend of Cockfighter's Ghost . . .

The Cockfighter's Ghost range is produced by Poole's Rock Wines and it's philosophy for Cockfighter's Ghost is to produce single varietal wines from Australia's finest wine regions, including of course, the Hunter Valley.

The original 8 hectare vineyard is planted to chardonnay and semillon, while there is a small block of old vine shiraz dating back fifty years. These estate vines are the foundation of the range which currently includes six wines - Chardonnay, Unwooded Chardonnay, Semillon, Verdelho, Shiraz and a Western Australian Pinot Noir.

The fifth release of this award winning Hunter Valley wine was made from 100% semillon grapes grown in the sandy loam soils of the Broke Fordwich district.

This handcrafted traditional Hunter style wine was crafted from ripe grapes brimming with complex, rich fruit flavours. After crushing, the grapes were ‘must’ chilled and gently pressed. The juice was then cold-settled and fermented at 10 - 15oC. Brief lees contact preceded filtration and cold stabilisation.

Cockfighter’s Ghost Semillon 1999 is an attractive unwooded contemporary Hunter semillon hallmarked by rich, ripe fruit flavours. A light straw colour with subtle green tints, it fills the glass with pleasing lifted aromas and displays a fresh, lively varietal palate with texture and structure.

McWilliams ELIZABETH Semillon Mount Pleasant New South Wales
Colour: Very pale yellow straw. Bouquet: A complex, intense and integrated mix of citrus, lime, lemon blossom and herbs. Palate: Lime and citrus flavours, supported by a fine acid structure and cut grass complexity. Cellar: Can support careful cellaring for up to ten years from vintage. Winemaking Notes After crushing and de-stemming, the must was chilled and the juice drained off. After cold settling for 48 hours, the clear juice was racked, inoculated with a neutral yeast and allowed to ferment slowly at a cool temperature for a period of four weeks. One month after fermentation, the wine was blended, heat and cold stabilised, and sterile filtered. The wine was bottled in July 2000. Handling has been kept to a minimum to protect the wine's delicate, pure fruit flavours. Background Information. A 100 per cent Semillon sourced primarily from Mount Pleasant's Lovedale and Middle Creek vineyards, with the balance from a selection of the best and oldest vineyard sites in Pokolbin, in the lower Hunter ValleyThe grapes were hand-picked from late January to mid-February.
