Description: Pronounced as in the flower the Red Rose this wines history started back in the late 1800's when the Stonewall vineyard was first conceived. Back then you couldn't just pop down to the local production nursery, order 50,000 vine rootlings and whack them into the ground. It wasn't even known what varieties would flourish. The best way to find out was to plant a wide variety of vines, see which did well, then propogate and plant out from these base stocks. The end result 100 or so years later is the original nursery block, full of different vines on a patch of dry ground.

This mixture of vines was a difficult to pick and separate because of the hodge-podge mix of old fashioned white and premium red varieties. Finally in 2002 the penny dropped for David Franz, rather than trying to pick all the little bits and pieces separately and add them to the larger lots from the rest of the vineyards, he decided to mix the lot together and see result.

As soon as all the conditions were right this old block was picked, crushed and cold macerated the must for 5 days before basket pressing, cold settling and clarifying the juice. The clears were cold fermented over three weeks to dryness, then sat on yeast lees for about a month.

The resultant wine was crisp and gutsy! To bring out the voluptuous fruit flavours a small portion of clarified juice, previously frozen was added back. The only option was to bottle under Stelvin closure to ensure every ounce of vibrancy would be retained.

David Franz BENJAMIN's PROMISE Shiraz Barossa Valley South Australia
The grapes were fermented and worked on their skins for two weeks with twice daily pumping over. After pressing, the Shiraz spent two months going on gross lees. The wine was carefully racked into a combination of new French and American oak barrels for 14 months maturation. Finally, after Two and a half years bottle ageing this dark, spicy and delightfully gutsy wine was released. This shiraz has an intense nose with superbly smooth mouthfeel, the tannins are balanced on the integrated palate showing sweet creamy fruit on the long rich finish. (6 x 75 cl)
David Franz OLD REDEMPTION Barossa Valley South Australia
The old Redemption's pedigree is truly great, in 1947 the blend was begun and when David Franz father Peter Lehmann joined Saltrams in 1959, he nurtured and added to the reserves with additions of Shiraz, Dolcetto and Tokay. These stocks then formed the base for the awesome old Tawnys, Alameda Show and Mr Pickwick. When Peter Lehmann left Saltram in 1979 he owned a significant portion of these old Tawny Stocks. In the 1980's he created a new blend, the Old Redemption from these amazing old reserves. The mid 80's, 90's and 2000's saw a decline in the interest in fortifieds so he tucked away the Old Redemption in its barrels for another day. Today fortified wines have started to gain appreciation and recognition and they are again available with a little more maturity, character and sophistication. A deep burnt umber coloured wine with golden edges, great clarity and brightness. The huge upfront nose is lifted with grapy brandy spirit showing golden toffee, complex old oak overlaying smoky hints. The palate has a silky rich mouth feel that develops into a fiery delight of hot chilli like pepper fire and cleansing spirit, while sweet oak abounds. The concentrated raisin sweetness fills and caresses the mouth before opening lotus like to layer upon layer of spicy complexity finishing with cigar box memories. Available in 50 cl Bottles. The grapes were fermented and worked on their skins with twice daily pumping over for two and a half weeks. After pressing, the Cabernet sat on gross lees before racking into new American oak hogsheads for 14 months. A minimum of two and a half years in the bottle has melded the flavour for a silky smooth wine. Huge nose, very powerful concentration of fruit, the palate is super juicy, with superb acidity and a long clean underlying tannin. Very well made with richness, balance and sophisticated finish.
