It is rich, ripe and velvety in the mouth, with masses of lingering cassis and blackberry fruit, lovely texture and a superb balance of tannin backbone and acidity. Serve at room temperature, and open 1-2 hours before drinking. A wonderful accompaniment to spring lamb, roast game birds and rare beef.
