Savigny-les-Beaune is a wine-growing commune situated to the North of Beaune. Very stony, clayey, heavy and chalky earth. A lengthy vinification done in wooden vats with pigeage and temperature control. A beautiful, dark-red robe with an elegant bouquet, marked by a dominance of small fruits and vanilla. This wine presents a very fine structure, and is discreetly tannic. A bottle that will keep for 10 years. To be served with light dishes, poultry or even feathered game. Aged in oak barrels and bottled after 18 months in barrel. (24 x 37.5 cl)

Jean-Claude Boisset Savigny Les Beaune AC
This appellation produces 130ha of village-appellation wine. Located at the mouth of a valley which offers some of the most appealing vistas to be found anywhere in the Côte d'Or, the vineyards are arranged in a V-shape, and produce a variety of wine styles. However, these terroirs do have something in common, as the wines tend to be refined, elegant and charming. The soils are essentially pebbly limestone. The grapes were hand picked at optimum maturity and put into small perforated boxes. Patriat has two sorting tables, with 10 people per table, looking for any grape that isn't fit to go into the fermenting vat. The grapes were destemmed and the whole, uncrushed berries were put into open wooden foudres. No yeasts, enzymes or tannins were added, to avoid altering the character of the must. The cold soak lasted for 5-6 days. Patriat doesn't plunge during this first week, as he thinks only bitter tannins are extracted at this stage. Once fermentation starts, the cap is plunged by foot . Maceration lasts for about three weeks, and malolactic happens ''when it happens''. The wine was matured in barrel for 15 months without racking . The wine was neither fined nor filtered before bottling. (6 x 75 cl)
