Dry Creek Vineyard insists on crafting each lot of wine separately with each vineyard lot crushed, fermented, and barrel aged separately. Approximately 75-100 different wines are produced each vintage, where fining is the exception, not the rule. A blend of 94% Sauvignon Blanc and 6% Viognier this barrel fermented offering has a slightly floral bouquet of lemongrass and lime zest with apricot notes. Refined tropical flavours and a hint of orange blossom are underscored with a trace of nutty vanilla. Fermented 3 weeks 85% in stainless steel tanks and 15% barrel fermented it is then aged 3 months in French and American oak. This Flagship Fume Blanc is fragrantly scented with fresh mown grass and grapefruit notes. Clean and fresh on the palate, a blend of lemongrass, citrus and honeysuckle flavours is followed by light oak and a hint of cream and vanilla. (12 x 75 cl)
