Viu Manent Malbec Colchagua Valley Chile
Description: TASTING NOTES Intensely violet in colour, on the nose this wine exhibits classic Malbec notes of blueberry, black cherry and violets. In the mouth lush flavours of freshly picked boysenberry, raspberry and blackberry give way to notes of chocolate and mocha. Fresh acidity and soft tannins combine to give a long, elegant finish. Oak 25% of the blend was matured for 5 months in second and third use American oak barrels. Vineyard Sourced from our San Carlos and El Olivar Estates, bot located in the Colchagua Valley . Harvested from Malbec vines with an average age of 6 to 8 years. Grape variety Malbec 100% Winemaking TechniquesThe fruit was destemmed and crushed to tank with the fermentation being carried out by selected yeasts with temperatures peaking betwee 28ºC and 30ºC . Each tank was given 2 pumpovers daily during fermentation and received a 1 week post fermentation maceration before being pressed off followed by a natural malolactic fermentation in tank. This wine was then partly barrel aged with the remainder being matured in stainless steel. The blend was then assembled from tank and barrel components before being lightly filtered and bottled. Viu Manent Sauvignon Blanc Colchagua Valley Chile
Description: Intense notes of pear and lychee dominate on the nose leading to pure flavours of white peach and nectarine in the mouth. A bright, zesty acidity imparts excellent structure and length. Vineyard San Carlos , located near the town of Cunaco , Colchagua Valley . Sourced from Sauvignon blanc blocks with an average age of 12 to 14 years. Vineyard Management Planting density of 3.623 vines/hectare, trained to vertical shoot positioned canopy and cane pruned. Canopy trimming is carried out once in early spring and again at the beginning summer. Leaf plucking is carried out by hand at the beginning of March in order to increase bunch exposure. Harvest Machine harvested from February 17th to 28th, all harvesting was carried out at night in order to keep fruit temperature to a minimum and thus minimise the potential for juice oxidation. Winemaking Techniques The grapes were initially crushed to a maceration tank and held at 8ºC to 10ºC for 24 hours in order to extract the aromas and flavours contained in the skin. The juice was then drained and cold settled for three days followed by racking and cool fermentation in stainless steel tanks with selected yeasts. Following this the wine was matured on light lees for six weeks before the blend was assembled, cold and protein stabilised and then filtered and bottled. Oak None. (12 x 75 cl)

Lisa McGuigan Tempus Two PEWTER LABEL Shiraz Barossa Valley
Description: Colour Dense violet purple Nose Powerful ribena fruit coupled with oak derived lifted buttery char. Palate A full bodied wine with fine integrated tannins and warm alcohol finish. Strong Shiraz fruit flavours of pepper/spice, cassis and earthy overtones are present and are complimented by a subtle underlay of new American oak. General The 1999 vintage was cool and dry with very little rain resulting in good quality clean fruit. The Vine Vale Vineyard consists entirely of old vines dry grown on a friable sandy loam which results in low cropping levels with the fruit being intensely flavoured. The fruit was allowed to hang on the vine until it began to show a slight dehydration at which point it was harvested and was transported to a crushing facility where it was crushed and chilled to 5 degrees and loaded onto a tanker and transported to the Hunter Valley. The must was onloaded into rotofermenters and allowed to warm up for two days before being inoculated with a selected yeast strain. Fermentation was conducted at 25 degrees C for approximately 4 days and then the grapes were pressed off through a Willmes airbag press to produce this intensely coloured wine with powerful fruit and soft tannins. This is a style that is capable of being cellared for decades or being consumed young when the fruit is dominating. (6 x 75 cl)

Lisa McGuigan Tempus Two PEWTER LABEL Merlot Hunter Valley
Description: Dense Purple Nose Typical Merlot varietal character showing perfumed cherry and tomato bush. Some toffee cinnamon charred oak give additional complexity. Palate A soft full bodied wine with fine grained tannins, fleshy fruit and good persistence. General The vintage in the Hunter Valley is characterised by cool conditions and persistent rain through out the growing season. In early January extremely hot weather stalled the ripening of fruit and it was necessary to slightly dehydrate the fruit on the vine to attain optimum balance. The grapes were machines harvested at night with the fruit being chilled down to 8 degrees into a conventional stainless steel fermentation vessel. The crushed grapes were cold soaked for approximately 5 days when the onset of wild fermentation occurred, at which point a low level of yeast was also added. On completion of fermentation the grapes were pressed via a large Diemme airbag press into another vessel where the wine was allowed to complete both primary and secondary fermentation. The wine was clarified with some going to barrel for maturation and a portion being held in stainless steel. Prior to bottling the wine received a mild fining with egg whites (6 x 75 cl)
