Highfield Estate ELSTREE Brut Sparkling Marlborough
Description: Thirty six months on yeast lees prior to disgorging has provided savoury, toasty aromas to compliment the fruitier flavours more often found in Marlborough Methode Champenoise. Natural lively acids have mellowed during the bottle ageing process resulting in a balanced, softer and more rounded sensation. The grapes were hand harvested and whole bunch pressed as a true Cuvée, to a maximum of 500 litres per tonne. The primary ferment was conducted by Prix de Mousse yeast in a 50/50 mix of stainless steel tanks and aged French oak barriques. At the end of the alcoholic fermentation the barrels were inoculated for malo-lactic fermentation. Blending from the barrels was carried out in January 1998 and the wine was then bottled, where it remained sur lies until being disgorged in March . (12 x 75 cl)

Daniel Dampt COTE DE LECHET 1er CRU Chablis
Description: Wine is ingrained in Daniel Dampts family history. Winegrowers dating back over 150 years, his domaine has merged with that of his father-in-law's, Jean Defaix and the estate currently counts, 26 hectares of vines in production, including 13 hectares of Chablis. An additional 13 hectares of Chablis 1er Cru are also owned from which Vaillons, Fourchaume, Cote de Lechet, Les Lys and Beauroy are produced. The recently constructed cellar is equipped with stainless steel tanks combined with the purchase of modern, powerful cellar equipment has enabled the group to increase its production, because all of Daniel Dampt's wines are produced and bottled by the domaine. This means all the wines are made from grapes grown in his own vineyards, which is a crucial factor in establishing the personality and quality of the wines. Known as the 'Gateway to Burgundy', the name Chablis conjures up great images in people's minds. The character of the wines is thanks to the Chardonnay vines being planted on unique chalky limestone and clay. When this is combined with a great climate where the sun shines throughout the growing season, the vineyard slopes can produce great wines. Excellent 1st cru of the left bank. This is a chardonnay with a very subtle nose of white flowers, while it is showing great intensity of flavour displaying full-biscuity notes and a mineral finish. (12 x 75 cl)
