Description: At Nikolaihof the Saahs Family cultivates 20 hectares of vineyards in the best locations on mineral-rich, steep-sloped, sunny terraces of granite, gneiss and mica . Some 55% of the vines are Riesling, about 35% Grüner Veltliner and the remaining 10% are divided between Neuburger, Weiburgunder, Fruhroter Veltliner and Chardonnay. To achieve higher quality the annual quantity of grapes harvested is very strictly limited. In the Nikolaihof vineyards harvesting is carried out by hand and to maintain the quality standards of Nikolaihof great attention is paid to the ripeness of the grapes. The grapes are pressed straight away and then, without any additives or treatment, using only the grapes' own yeasts, the fermentation takes place in a huge wooden vat at the natural temperature without any cooling or computer-calculated fermentation techniques. The great differences between day and night temperatures in the last weeks before the harvest produce a unique range of fruit flavours and bouquets, perfumes and aromas coupled with the very finest acidity. The Saahs family operates in accordance with the regulations of the Demeter Association, one of the strictest control systems of organic agriculture. Its principles may be very roughly summed up as follows: to get as much power and energy as possible into the wine whilst interfering with nature as little as possible. In the Nikolaihof vineyards no herbicides, pesticides, artificial fertilisers nor synthetic sprays are used, but stinging nettle manure, valerian drops, valerian tea and other specially produced preparations, which are applied in highly diluted form like homeopathic medicines, are used. The whole farm or enterprise must be run along biodynamic guidelines. Regular state inspections ensure that these working principles are properly applied. The biodynamic wine estate is regulated through the Austrian wine code, the Austrian foodstuffs codex and the EU directive 'Ecological Agriculture'. Nikolaihof is the oldest wine estate in Austria, whose history goes back almost 2000 years to Roman times. In the walls of Nikolaihof can be found remains of the early Christian Agapit basilica in which Bishop Pilgrim of Passau held a synod in 985 A.D. In 1075 the former 'Freihof' was referred to in a document as the central administrative seat of the Passau monastery of St Nikola; the present-day chapel was established by the Augustinian canons of this monastery. Wine has been produced here since the time of the Celts. The first documentary evidence of this dates from around 470 A.D. in the time of St Severin and the Romans. (12 x 75 cl)

Clos de l'Anhel LES DIMANCHES Corbieres
Description: A blend of Carignan 72% and Grenache noir 28% in the vineyard the grapes are picked by hand and once in the winery the bunches are de-stemmed and crushed. Here Cap punching by hand occurs twice a day, until total immersion of the pomace cap and the grape varieties are blended when vatting takes place. Description: Owned by the same family since 1834 Domaine Chandon de Briailles was once a renowned domaine, but things had declined. Then in 1990, Nadine de Nicolay and her daughter, Claude, took over. Changes were made everywhere as yields were reduced, the use of herbicides abandoned for natural methods, while fining and filtration were stopped. This change in philosophy resulted in a changed of fortune and Domaine Chandon de Briailles is once again acknowledged as a maker of fine wines. This change has been reflected not only in the vineyard but also in the winery and the wines now spend between 18 and 24 months in the underground cellars where they are racked twice and bottled by gravity without filtration. A pinot with great character full of dark forrest fruit aromas that lead onto the palate. This wine is well balanced with a good tannic structure, a little minerality and enjoyable finish.
