It is elegant yet dark and brooding; sophisticated yet fully loaded with bright fruit and herbal over tones. It has a grippy, solid structure that finally gives way to a long finish. Antony Terryn is one of those wine makers whose unbridled passion for his soil, vines and winemaking allows him to transcend the limitations set by those around him. Having made wine in some of the worlds most prestigious arenas, including his native France, Antony settled on a patch of old vine Tinta de Toro near the town of Toro in North West Spain. Being an area renowned for low cost bulk wine that fuelled the inhabitants of Madrid, what Toro isnt known for are the small patches of exceptional terroir that are to be found with a little hard work, but which largely seemed to have gone unnoticed. It is from this small patch of 8 hectares that Antony produces a small amount of each of his wines with the loving care and attention to detail that is so apparent once tasted. The low yields, hand harvesting and organic viticulture along with exacting fruit selection and meticulous wine making produce simply stunning wines. (6 x 75 cl)

Domaine Jean-Pierre Grossot LES FOURNEAUX 1er Cru Chablis
Description: Corinne and Jean-Pierre Grossot are the third generation of winemakers from this family owned domaine, where they cultivate 13 hectres of Chablis Appellation Controlée vineyards. The grapes are hand harvested, gently pressed to achieve the fullest extraction of flavors and aromas. The juice ferments very slowly at low, controlled temperatures in stainless steel tanks. After a first racking, the new wines age in stainless steel only, which is traditional for Chablis. Finally the bottling takes place 1 year after the harvest. This Chablis comes from the south facing portion vineyard where the grapes receive the greatest heat from the sun and hence the wines name Fourneaux or Oven. The wine offers ripe nearly tropical fruit flavors laced with mineral, oak, honey, and good mouth feel. (6 x 75 cl)

The uniqueness of the terroir, the passion of these two families who own Waterford and the masterful talent of winemaker Kevin Arnold form a catalyst for wines that are relished around the world. Barrel fermented in 100% French oak from 60% first fill, 20% second fill and 20% third fill barrels the wine spends 3 months ageing in barrel on primary lees, with battonage once a week. Clear, green straw coloured wine with tints of green has aromas of nuts as well as elegant toast on the nose. Clean, fresh lemon and lime flavours reveal grapefruit, lime and juicy Kiwi fruit on the palate. Understated, rich finesse, restrained by refreshing acidity lead to a long elegant finish.
