Domaine Jean Pillot LES CHAMPS CLAUDE Santenay
Description: Jean-Marc Pillot has recently taken over from his father, Jean, at the family owned domaine. While able to draw on the experience and advice of his father he has made changes to the estate, including a new cave, that have propelled the domaine up the league of premiere producers of wine in Burgundy. Equally capable of producing great white or red wine the style is always intensely fruity, graceful, and precise. With white wines dominating the 10 hectare domaine the vineyard holdings are spread throughout the village of Chassagne with subsidiary parcels in Puligny, Santenay, and Remigny . The vines in most parcels are between 25 and 50 years old. Traditional viticultural practices are used in the vineyards where, Cordon de Royat and Guyot Simple pruning and training systems are employed. The grapes are completely destemmed before being sent into open top tanks where the Pinot Noir undergoes cold maceration for 5 days at less than 10 C, before spending 10 to 18 months in barrel. The 40 year old Pinot Noir vines have produced a ruby/red coloured wine. With aromas of red fruits and smoke, the great tannin structure reveals dense ripe fruit flavours and a long finish.

Domaine Franck Millet CUVEE INSOLITE Sancerre
Description: The charming Betty and Franck Millet own this 12 hectare domaine, centred around the village of Bué en Sancerre. The Sancerre vineyards are situated along the Loire River approximately two hours south of Paris. The Sauvignon Blanc grapes are pressed as soon as they are picked. The juice is then allowed to settle, then the alcoholic fermentation begins. The 1998 vintage was the first vintage to see the use of temperature controlled fermentation at the domaine. The fermentation is now conducted between 14°C to 17°C. Low temperature fermentation means a longer fermentation is possible which allows a gentler extraction of primary fruit, which is preserved and defines the character of the wine. A few weeks later, the wine is clarified with a natural filtering agent to eliminate impurities. Lastly, it is racked, filtered, and bottled. A wine made from 100% Sauvignon Blanc, it has a pronounced, expressive nose of green fruits, fresh cut grass and minerals. The palate is clean and ultra crisp; medium bodied and packed with greengage, lime and gooseberry fruit. The finish is clean, showing a real sense of place through its minerality. (6 x 75 cl)
