J.L.Wolf Jesuitgarten GRAND CRU Riesling Pfalz Germany
Description: The J L Wolf estate in Wachenheim is a model farm designed by the architect Eisenlohr. It was completed in 1843 and boasts a unique country villa, a courtyard with mature trees, a formal garden and magnificent vaulted cellars. The winery was founded in 1756 by the then mayor, Johann Wolf, who bought some of the best vineyard parcels above the villages of Wachenheim, Forst and Deidesheim. While in 1828 the King of Bavaria commissioned a cartographer to produce a map showing the taxable value of every slope in the area. The J L Wolf holdings still include five grand cru and four premier cru vineyards. In 1996 Ernst Loosen took over the winemaking business, bringing new winemaking concepts and goals with him, including reduced yields, the use of organic fertilisers and selective harvesting. Ernst is also more famous as the owner of the Dr Loosen Estate in Bernkastel on the Mosel. (6 x 75 cl)

Chateau Le Payral Bergerac Sec
Description: The 12.5ha vineyard is situated about 20km South West of Bergerac on clayey limestone grounds. It's excellent South West exposure on the hillsides promises the utmost basis for high class wines. Severe selections are made when sorting grapes prior to fermentation. The grapes are allowed to macerate for approximately 18 hours before being pressed with a gentle pneumatic press. While fermenting the must is not allowed to exceed 18 ºC, this is to allow the wine to keep its delicate flavours. Once fermented the must is kept in contact with the lees, with some stirring from time to time. This process is carried out in order for the wine to develop more complexity. This is a blend of 60% Sauvignon Blanc, 35% Semillon and 5% Muscadelle with aromas of exotic fruits, white peaches and a fresh, grassy character are found on the nose. The palate is long lasting with a surprising impression of full-bodied structure supporting the peachy, citrus fruit, and complemented by a dry finish. (12 x 75 cl)

Chateau Le Payral Rouge Bergerac
Description: The 12.5ha vineyard is situated about 20km South West of Bergerac on clayey limestone grounds. It's excellent South West exposure on the hillsides promises the utmost basis for high class wines. The fermentation lasts 15-30 days depending on the vintage characteristics. The wine is pumped over twice a day during the initial stages of fermentation, towards the end it occurs once. This is done so as to extract colour and tannins from the wine. The whole fermentation process is carefully monitored and is controlled at 33°C. Once the wine has completed the fermentation process the wine is allowed to undergo Malolactic Fermentation. This natural process softens the structure of the wine and alows it to be more accessible. A blend of 60% Cabernet Sauvignon and 40% Merlot this wine is spicy, with rich, soft, red berry fruits on the nose. This Follows through on the palate with generous ripe fruit and a pepper-herby tone, while a fine structure lends finesse and elegance. (12 x 75 cl)
