Houghton Sparkling Wine Pemberton Western Australia
Description: Houghton Wines, based in the heart of the Swan Valley, contains a wealth of romantic history. Named after Lieutenant Colonel Richmond Houghton in 1836, the first commercial vintage was produced in 1859 totalling 25 gallons, the foundation for one of Australia's oldest continuous winemakers. The picturesque Houghton winery property has 50 hectares planted with premium grape varieties including Verdelho, Chardonnay, Semillon and Chenin Blanc. Early documentation and current research suggests the first vines were planted between 1830 and 1836. In addition Houghton operates four of Western Australia's largest vineyards at Moondah Brook, Pemberton, Mt Barker and Frankland River, along with sourcing fruit from Margaret River, Harvey and emerging premium areas. These diverse wine regions provide the necessary fruit requirements vital for the production of premium table wines, which are distinctly Western Australian. This sparkling wine is a medium straw colour, crystal clear with a fine and persistent bead. Aged Aromas of toast and butter mushrooms are complemented with fresh yeast autolysis characters. A well structured balance of Chardonnay and Pinot Noir provides an even and balanced palate of great length. The extended bottle maturation on yeast lees gives great complexity and depth to the delicate palate. A wine of finesse finishing with crisp, natural acid.

Rust en Vrede Shiraz Stellenbosch RSA
Description: Specialising in the production of red wine only, Rust en Vrede has established itself as one of South Africa's premium red wine estates. Full-bodied and complex, Rust en Vrede's wines reflect the uniqueness of the Stellenbosch terroir. Rust en Vrede is proud to be part of a remarkable three hundred year old wine tradition and continues to pursue the excellence synonymous with wines produced by Stellenbosch's private estates. Protected terroir high up on the Helderberg Mountain is vital to imparting deep warm flavours to the wines. North facing and slightly warmer, the vineyard's close proximity to the Atlantic Ocean is what keep the temperatures low and extend the ripening period of the grapes. Harvested at 24ºc, the Shiraz ferments in open tank fermentors and pumped over five times per day. Each Shiraz clone sees a unique treatment of yeast and wood. Matured fifty percent in new American oak and the rest in second fill oak for 18 months, the wine receives bottle-maturation for a further twenty months before release. A Deep mulberry red coloured wine with aromas of dark plum, cherry, leather and smoked bacon are infused with subtle oak. The incredible fusion of pepper, spice, cherry on the palate with floral and Eucalyptus notes has produced a wine with a long, clean elegant finish. (6 x 75 cl)

St Hallett BLACKWELL Shiraz Barossa Valley South Australia
Description: As one of the Barossa's premium winemakers St Hallett sources Shiraz grapes from a number of different vineyard site in both the Barossa and Eden Valleys. The common factor with all grapes destined for the Blackwell Shiraz and our flagship Old Black Shiraz is they come from vineyards aged from 70 up to 100 years. Mature, dry grown vineyards such as these produce tiny yields of highly concentrated fruit, and result in a wine style that is quite unique to the Barossa. Typically the Blackwell Shiraz shows sweet blackcurrant and plum characters on the nose wit a dusting of vanillin oak. These flavours carry through onto the palate which has rich, complex flavours of dark chocolate, cherry and spice with a smooth generous finish. We would recommend cellaring for six to eight years from vintage (6 x 75 cl)
