The village of Vosne-Romanée is located at the heart of the Côte de Nuits, between Vougeot and Nuits-Saint-Georges. It is at an ideal altitude for the vines , and covers a little over 150 hectares. The soils have a high limestone and clay content. Fruit is sourced from a selection of old vines. The grapes are hand picked in September and put into small perforated boxes. Patriat has two sorting tables, with 10 people per table, looking for any grape that isn't fit to go into the fermenting vat. For reds, he de-stems completely , and returns the whole, uncrushed grapes into the boxes into which they were picked and then tips them into open wooden foudres. No yeasts, enzymes or tannins are added, to avoid altering the character of the must. The cold soak lasted for 5-6 days. Patriat doesn't plunge during this first week, as he thinks only bitter tannins are extracted at this stage. Once fermentation starts, the cap is plunged by foot . Maceration lasted for 3 weeks. The wine was matured in barrel for sixteen months . The wine is lightly filtered before bottling. (6 x 75 cl)

Description: The Baldes family has been making Cahors since 1830. The vineyards comprise 40 hectares of prime south-facing vineyard sites by Puy l'Eveque and contain the usual mixture of Malbec, Merlot and Tannat. The emphasis on terroir is exemplified most purely in the Clos Triguedina which is aged in large old oak casks for twelve to eighteen months. The flavours are fabulous. Black cherry, figs in spirit, menthol, eucalyptus, but most dominant are the smells of dry hay and earl grey tea. (6 x 75 cl)

Description: The Baldes family has been making Cahors since 1830. The vineyards comprise 40 hectares of prime south-facing vineyard sites by Puy l'Eveque and contain the usual mixture of Malbec, Merlot and Tannat. Prince Probus, named after the Roman emperor who repealed Domitian's edict and allowed vines to be planted again in the region, is a cuvee of older vines aged in a mixture of new and old oak barrels for nine to twelve months. With its glossy purple colour, attractive nose of blackberries and sloes, the Probus is very polished in the mouth, with mint and vanilla from the new oak, ripe berry fruit and a long finish. Description: The Baldes family has been making Cahors since 1830. The vineyards comprise 40 hectares of prime south-facing vineyard sites by Puy l'Eveque and contain the usual mixture of Malbec, Merlot and Tannat. Using evidence garnered from old documents Jean-Luc Baldes has been experimenting in a corner of his cellar over the years with small batches of grapes and, now, finally, has produced this special limited release from his oldest vines in the best-located vineyards. Apparently, it is all in the timing and the ingredients as selected super-ripe grapes are put into a vat, heated quickly to nearly 60 degrees centigrade and the resulting juice goes into new oak barrels to brood and treacle darkly awhile. The resulting style is unique dry, grippy, herby, yet also smooth and port-like with a whisper of prunes. (6 x 75 cl)

The soil of Marcillac is very particular, called 'rougier' by the locals, due to its intense red colour, thanks to the high iron content. The wines are high in jagged acidity showing a haunting earthiness and the Cuvee Lairis undergoes 28 days of maceration in closed fermenters. It is fermented in open tanks with the cap punched down twice a day then aged in well-seasoned barrels or foudres for 20 months.
