 |
A deep scarlet purple shiraz it has a nose showing great regional intense definition along with cassis chocolate aromas and charred vanillan oak. A full bodied wine with soft fine grained tannins, rich palate and good persistence. The strong Shiraz fruit flavours of pepper, spice and cherry are complimented by a subtle underlay of coconut / vanillan American oak. The old Shiraz vines at Sandy Hollow have producd an intensely flavoured ripe fruit flavoured wine. The grapes were crushed and chilled into a rotofermenter where they were allowed to cold soak for 3 days prior to inoculation with selected yeast strains. The grapes were then pressed in a bucher tank press prior to being stored in new Schahinger American and Hungarian oak barriques for 12 months. The wine was racked on a three monthly basis prior to being racked to tank and lightly fined using egg whites. No filtration was carried out during the winemaking process. (6 x 75 cl)

McHenry 3 AMIGOS Marsanne/Chardonnay/Viognier Magaret River Australia
Description: The primo amigo in this trio is marsanne, grown at the McLeod Creek and Calgardup Brook vineyards. Chardonnay is sourced from Rocky Road and the third amigo, rousanne, is grown at McLeod Creek. These vineyards lie in the southern half of the Margaret River wine region which has a strong maritime influence from the Great Southern Ocean. Three perfectly compatible grape varieties come together in a wine that is about texture and palate feel. The aroma opens with some slightly nutty, creamy characters showing the influence of barrel fermentation and time on lees. The palate really shines with lovely fine acidity providing a zingy freshness that allows the soft, generous flavours of the three varieties to reveal themselves through perfect integration. The finish is sustained with crisp acid, providing an exquisite lift. This is a beautiful, easy drinking wine that peels off new layers of flavour with each taste. (12 x 75 cl)

Description: The classic blend of Margaret River; in this case it's a 50/50 combination of these two exceptional bedfellows. Aromas of fresh gooseberry and passionfruit dominate tropical fruit aromas, working neatly into a generous mix of fresh cut grass and lemon citrus. The palate is intense but controlled and restrained with a fine acid and lingering, lively flavours. Fruit was sourced from southern Margaret River, a cooler part of the region which suits these two aromatic varieties. Viticultural practices, now taken as standard, have evolved over thirty years and to a large extent, this wine is made on the vine. It is a balancing act between leaf to crop ratio and the leaf's exposure to sunlight. The ability to harvest at night is all important. (12 x 75 cl)

Description: Rich aromas of currant muffin, plum, briar berry and smoked ham-hock lead to a lush and rich palate. This is all tied together with firm but unassertive tannins and gentle acid. Shiraz grapes were sourced from the northern half of the Margaret River region. The warm northerly exposure delivers a richness and full flavoured ripeness to the wine. McWilliams ELIZABETH Semillon Mount Pleasant New South Wales
Description: Colour: Very pale yellow straw. Bouquet: A complex, intense and integrated mix of citrus, lime, lemon blossom and herbs. Palate: Lime and citrus flavours, supported by a fine acid structure and cut grass complexity. Cellar: Can support careful cellaring for up to ten years from vintage. Winemaking Notes After crushing and de-stemming, the must was chilled and the juice drained off. After cold settling for 48 hours, the clear juice was racked, inoculated with a neutral yeast and allowed to ferment slowly at a cool temperature for a period of four weeks. One month after fermentation, the wine was blended, heat and cold stabilised, and sterile filtered. The wine was bottled in July 2000. Handling has been kept to a minimum to protect the wine's delicate, pure fruit flavours. Background Information. A 100 per cent Semillon sourced primarily from Mount Pleasant's Lovedale and Middle Creek vineyards, with the balance from a selection of the best and oldest vineyard sites in Pokolbin, in the lower Hunter ValleyThe grapes were hand-picked from late January to mid-February. Description: Colour: Deep crimson with a ruby hue.Bouquet: Powerful and complex, with cassis, blackberry and plum aromas accompanied by toasty vanillin oak and dark chocolate characters derived from barrel fermentation and maturation. Palate: Complex palate with rich cassis and blackberry fruit flavours highlighted by characteristic minty notes. Dark chocolate and spicy oak flavours compliment this full bodied wine style, which displays a long, velvety, fine-grained tannin finish. Cellaring: Drinking well now, but will develop further with up to ten years in the cellar. Winemaker Notes: After crushing, the must was fermented in headed-down stainless steel fermenters. The juice was pumped over three times a day for seven days to ensure maximum extraction of colour and flavour. The juice was then drained from the tank and the skins pressed. The wine then completed primary and malolactic fermentation in a combination of new and used French and American oak barriques, hogsheads and puncheons. Following fermentation, the wine was racked off lees and returned to the same barrels, where it was matured for 20 months. Description: This is a medium-bodied wine with a lingering dry tannin finish. Colour: Rich burgundy. Bouquet: Complex, savoury nose of spice, white pepper, blackberry and ripe aromas combine with characters of cedar oak, toast and vanilla. Palate: A refined savoury palate of plum and blackberry fruit flavours integrated with complex spice nutmeg, cinnamon and white pepper characters. Well integrated toasty cedar and vanilla oak flavours are present, derived from barrel fermentation and maturation. Cellaring: Drinking well now, but will develop further with four to eight years in the cellar. Winemaker Notes: After crushing, the must was fermented in headed-down stainless steel fermenters.
