The fountain in the Waterford courtyard is a symbol of the exuberance of the Waterford Way and the distinctive wines that are born of this land. The uniqueness of the terroir, the passion of these two families who own Waterford and the masterful talent of winemaker Kevin Arnold form a catalyst for wines that are relished around the world. Barrel fermented in 100% French oak from 60% first fill, 20% second fill and 20% third fill barrels the wine spends 3 months ageing in barrel on primary lees, with battonage once a week. Clear, green straw coloured wine with tints of green has aromas of nuts as well as elegant toast on the nose. Clean, fresh lemon and lime flavours reveal grapefruit, lime and juicy Kiwi fruit on the palate. Understated, rich finesse, restrained by refreshing acidity lead to a long elegant finish. Domaine Jean-Jacques Girard Savigny les Beaune Blanc
Description: Founded in 1529 by Jean Girard, this is one of Savigny's oldest domaines. Today the domaine is run by Georges Girard and his son, Philippe. The domaine has 15 hectares of vines in Savigny, Pernand-Vergelesses and Aloxe Corton. Grapes are only partially de-stemmed and then undergo a relatively short cuvaison of around 12-13 days in cement vats. However, prior to the 1994 vintage, Proprietor Michael Tiller, then an airline pilot with Air New Zealand, together with his wife Robyn, operated Isabel Estate successfully as a contract grape growing vineyard supplying some of Marlborough's leading wine producers with much sought after premium fruit.
