Description: Tasting Notes From a single vineyard called 'River Garden'. This excellent wine already shows the promising potential of the vineyards. A fruit-driven wine with cherry and mulberry flavours, complimented by just enough oak to give a balanced finish to the fruit Maturation and Vinification The grapes are hand harvested in mid-February from 8 year old vines in the Wellington wine growing area. The grapes are destalked, lightly crushed and then transferred to stainless steel tanks for fermentation at controlled temperatures. The wine is then transferred to new French oak barrels for 12 months before bottling. (6 x 75 cl)

Chateau Haut Pezac Grand Cru St-Emilion
Description: One of the Grand Cru Chateaux of St. Emilion, Château Haut Pezat consistently makes excellent wines that have all the softness and elegance that one would expect from top wines from this appellation. These wines are made traditionally, with quite long vatting periods of periods of between 5 and 6 weeks in concrete tanks. The wines are then aged in 2 year old casks, 10% of which is renewed yearly. This is a blend of Merlot Cabernet Franc and Cabernet Sauvignon showing hints of ripe plums and damsons on the nose and palate. Rich and velvety, with soft tannin and a long elegant finish this is a great wine to savour.

Highfield Estate ELSTREE Brut Sparkling Marlborough
Description: Thirty six months on yeast lees prior to disgorging has provided savoury, toasty aromas to compliment the fruitier flavours more often found in Marlborough Methode Champenoise. Natural lively acids have mellowed during the bottle ageing process resulting in a balanced, softer and more rounded sensation. The grapes were hand harvested and whole bunch pressed as a true Cuvée, to a maximum of 500 litres per tonne. The primary ferment was conducted by Prix de Mousse yeast in a 50/50 mix of stainless steel tanks and aged French oak barriques. At the end of the alcoholic fermentation the barrels were inoculated for malo-lactic fermentation. Blending from the barrels was carried out in January 1998 and the wine was then bottled, where it remained sur lies until being disgorged in March . (12 x 75 cl)
