Dalwhinnie is located near the tiny village of Moonambel in the heart of the Pyrenees region of Western Victoria, Australia and is a super premium producer of Shiraz, Cabernet Sauvignon, Pinot Noir and Chardonnay. After 25 years of growing grapes, the 18 hectare vineyard is now fully mature, producing true varietal fruit characters with great concentration of flavours. At 595 metres above sea-level Dalwhinnie is the highest and most remote of the Pyrenees district vineyards. Surrounded and sheltered by the highest range, this unique bowl of vines is a world unto itself, located in a naturally undulating trough which falls away from the hills, forming an amphitheatre nestled into the ranges. Description: TASTING NOTE The philosophy behind this wine is to combine the sweet, ripe and fruity character of Malbec with the spicy, black fruit flavours of Syrah. The result is a pleasant, sweet, aromatic wine which is highly palatable, with an excellent concentration and body. Grapes are sourced from 12 and 20 year old vineyards in Agrelo, grown at an altitude of 1000m. The grapes are handpicked and then fermented in stainless steel tanks with selected yeast. WINEMAKERS NOTES Following 100% malo-lactic fermentation the wine is blended after the first racking to help marry the varietals. Despite early bud break, true ripening came very slow due to some unseasonably warm weather during the start of the growing season and several heat spike weeks. Dark ruby-red in colour, the 2000 Seven Oaks Cabernet Sauvignon has aromas of black cherry, currants, blueberry, violets and jammy black fruits. The bouquet is an elegant blend of cedar, mocha, cigar box and black olive. Showing ripe and ample tannins with a plump, concentrated structure supported by good aidity. Available in half bottles.
