Domaine Cazes RIVESALTES AMBRES Rivesaltes
Description: Among a wide range of small producers the Cazes brothers have emerged as the leading name in Rivesaltes. Their estate of over 350 acres enables them to produce a variety of wines, yet it is through their sweet wines that they have gained popularity. These, known as Vins Doux Naturels, are wines of great concentration where the natural sweetness of the grape has been preserved. The production of these sweet, fortified wines is almost a Roussillon exclusivity, since 90 per cent of France's Vins Doux Naturels come from the Pyrénées Orientales departement in which Roussillon is found. For centuries, they have been made according to the process of fortification, a process discovered in 1285 by Arnau de Vilanova: the fermentation of grape juice is arrested by adding a quantity of neutral alcohol to between 5 and 10 per cent of the total volume. In this way the wine retains a proportion of the sugars that occur naturally in the fruit. Fortification may take place earlier or later, according to whether a sweet or medium-sweet wine is required, providing that the regulations regarding final alcohol content, which must be between 15% and 18% by volume, are respected. Pale gold in colour with aromas of lime, grapefruit, tropical fruit and fennel. The palate is rounded, rich and sweet without being cloying as the honey and apricot fruit is balanced with a limey acidity that keeps it fresh through to the soft finish. Available in half bottles. Description: Bay of Fires was born of a desire by BRL Hardy to make cool climate wines of classical structure, combining fruit intensity with refinement, complexity and persistence of flavour. Tasmania's latitude and island status was identified and with its unique climates more closely resembling the classic winegrowing regions of France this has been achieved. Arras is the flagship wine produced by Bay of Fires Winery. 100% Tasmanian, the wine aims to capture a sense of place; the true essence of Tasmania. As with the Bay of Fires range, fruit for Arras is sourced across Tasmania, taking advantage of diverse viticultural conditions and enabling the selection of only the most premium parcels from each region. The extreme cool climate of the Bay of Fires property allows maximum flavour retention through the long slow ripening season. The grapes are hand picked and pressed in close proximity to the vineyards to ensure optimum quality is maintained. Traditional sparkling wine techniques were utilised throughout to enhance the fruits natural qualities. One hundred percent of the base wine underwent malolactic fermentation and the wine was aged on yeast lees. Patience and careful handling have been rewarded with a sparkling wine of the finest calibre. Like the luxurious tapestries from which it takes its name, Arras, Australia's prestige sparkling wine, is skillfully woven together from a blend of Chardonnay 61.5% and Pinot Noir 38.5%. This sparkling wine is a medium straw colour with a gentle green/gold hue. Pristine clarity and a fine, persistent bead further enhances the aesthetics of this wine. Lifted mushroom/truffle and lanolin bouquet typical of aged cold climate Chardonnay, it is complimented by white stone-fruit aromas of Pinot Noir underpinned by yeast complexity. Althaus STONEY VINEYARD Sauvignon Blanc Tasmania
Description: Peter and Ruth Althaus' 20ha property in the Coal River Valley in Southern Tasmania is truly remarkable in that the Cabernet, Pinot Noir and Sauvignon Blanc that it produces is not just high quality but is truly of world class. Here they are producing not only the 'Stoney Vineyard' but the 'Domaine A' range of wines. Peter Althaus was formerly a business man with IBM, working in Geneva. Having developed a palate for fine European wine and a curiosity for how he could set about making it, the Althaus' set about finding a vineyard site with potential to make outstanding wines. Virtually all of the European sites had already been identified so the search was extended to the Southern hemisphere. Peter long favoured the Central Otago region of New Zealand but eventually settled on the tiny 1 hectare property that today forms Domaine A. Since 1989, when they took over the Domaine, planting has increased to 20 hectares and includes Cabernet Sauvignon, Merlot, Pinot Noir, Petit Verdot and Sauvignon Blanc. Vines are densely planted and the sloping North/North East aspect coupled with a temperate maritime climate ensures that the grapes have a long, cool growing season (12 x 75 cl)
