Botrytis-Affected Whites |
| Description: |
 |
It has a full nose with a blend of honey, wax, candied fruits and aromas that are characteristic of botrytis. The wine is powerful, while maintaining a touch of acidity for a light effect and a superb compromise between fat and finesse. Location and Soil Vineyard on hillsides south of Bergerac in one of the most prestigious towns of the Monbazillac appellation, at altitude of 170 metres, on clayey limestone and the calcareous subsoil of Castillon. Grape Variety Blend of Sémillon , Sauvignon and Muscadelle . Winemaking Process Over-matured grapes concentrated by the Noble Rot are picked, in October to the beginning of November. The grapes are pressed gradually so as to enable the extraction of the best wine drained from the vat. The must is then fermented at a controlled temperature of approximately 20ºC. When the alcohol-residual sugar balance has been reached, fermentation is stopped by cold sulphating to master the sulphur content. After six months in a vat for clarification, the wine is run off into oak 225-litre barrels. After being kept in wood for a period of 12 to 18 months, the wine takes on its fullness, with the aromas thus revealed. A gentle fining process is carried out just before bottling. (6 x 75 cl)

Estancia Cabernet Sauvignon Paso Robles California
Description: Roughly translated from the Spanish word for 'estate' Estancia's name emphasizes the founder's conviction that the world's best wines capture the essence of their place of origin. In 1986, Estancia purchased the former Paul Mason vineyard ranches in the Monterey town of Soledad to established it as the home of Estancia Winery. This wine is made from grapes grown at the Paso Robles vineyard. It is characterised by hot days, cool nights and stressed vines that earmark this region and 700-acre vineyard for greatness. Its location in Paso Robles, a region that borders Monterey County to the south and is twenty miles inland from the Pacific Ocean, is integral in shaping the crisp acidity and mature tannins distinctive of the Cabernet, Merlot, Petite Verdot, Zinfandel, Syrah and Petite Sirah grown here. Extreme temperature swings are common, with summer daytime temperatures topping 100 degrees Fahrenheit and nights influenced by cool fog. The vineyard's location on open benchlands along the Estrella River, where six soil types battle for minimal water, also adds to the deeply concentrated nature of the grapes. Today, Estancia's winemakers strive to combine the best of both worlds- a state of the art winemaking facility, and a traditional, hands-on approach to each grape they produce. In the end, this combination of technology and tradition allows Estancia to deliver the hand-crafted quality for which these wines are known. While the cutting-edge facilities enable Estancia to take advantage of the beneficial advances in winemaking technology. Finally, Estancia's commitment to old world processes results in the complexity and elegance found in artisanal and boutique wines. This wine is a blend of Cabernet Sauvignon , Merlot and a little Petit Verdot that will spend 12 months in Amrican Oak of which 25% is new. This has produced a deep garnet coloured wine with crimson hues. This wine has a black cherry and dutch chocolate aroma to complement the spicy, peppery notes and hints of sweet oak. The opulent dark fruit flavours and ripe supple tannins complement the long, rich finish.

St Hallett BLACKWELL Shiraz Barossa Valley South Australia
Description: As one of the Barossa's premium winemakers St Hallett sources Shiraz grapes from a number of different vineyard site in both the Barossa and Eden Valleys. The common factor with all grapes destined for the Blackwell Shiraz and our flagship Old Black Shiraz is they come from vineyards aged from 70 up to 100 years. Mature, dry grown vineyards such as these produce tiny yields of highly concentrated fruit, and result in a wine style that is quite unique to the Barossa. Typically the Blackwell Shiraz shows sweet blackcurrant and plum characters on the nose wit a dusting of vanillin oak. These flavours carry through onto the palate which has rich, complex flavours of dark chocolate, cherry and spice with a smooth generous finish. We would recommend cellaring for six to eight years from vintage (6 x 75 cl)
