The vinification is completely classical as carried out in the Medoc; long fermentations , ageing in wooden casks, light fining with egg whites and no filtering of the Reds. A nice deep ruby coloured wine with inky tints. The vinous nose is expressive, complex showing strawberry notes. The palate is ample, round, powerful with flavoursome red berries, while the finish is superb thanks to a great length and good freshness. (12 x 75 cl)

Description: Horse Mountain Wines embody a new spirit of adventure in winemaking in the Cape with a fresh, entrepreneurial approach, unfettered by conventional tradition but rooted in the tried and tested philosophy that fine wine is made in the vineyard. These wines come from a former dairy farm on the slopes of the Paardeberg mountain between Paarl and Wellington. The 217ha property was acquired in 1997 after its potential as a suitable terroir for quality wine production had been identified. Since then, energetic owner Craig Lardner, a former property developer with a new-found passion for winemaking, and innovative consultant viticulturist Paul Wallace, have systematically selected nearly 50ha of the 150ha of viticulturally viable ground for painstaking preparation and careful cultivation to five grape varieties. The grapes grown include Cabernet Sauvignon and Shiraz that flourish on the high-lying, high-potential Vilefontes soils. While the Merlot and Pinotage have settled in the lower-lying, rich red Swartland/Glenrosa soils and Cabernet Franc does well in the similarly low-altitude Estcourt soils. Such significant variations in soil comnbined with an exceptional climate compared with conditions in the surrounding Paarl wine growing district, earned this new viticultural pocket its own 'ward' status in 2003. Horse Mountain wines thus proudly bear the designation Wine of Origin Voor-Paardeberg on their labels. Named after the owners Daughter Michelle it is a blend of Cabernet Sauvignon, Merlot and Cabernet Franc. The wine underwent ageing in new French oak barrels for 10 months, then blended and put back into oak for a further two months before bottling. This is a deep red coloured wine with aromas of intense cedar spices, cherries as well as herbal, minty hints. Juicy, ripe with lots of vitality and interest with deep veined tannins from oaking make this is a wine to enjoy. (6 x 75 cl)

Yaldara STONEY VALE Shiraz/Cabernet Barossa Vallay South Australia
Description: The winery employs 100 people, crushes 9,000 tonnes of grapes and produces 700,000 cases per annum. Yaldara, along with many of the original Australian wineries, produced fine old fortified Port style wines and very big robust reds. When Herman's son Dieter Thumm became Managing Director in the late 1980's it was realised that Yaldara would have to update its wine making and produce a far more interesting modern style of wine. To do this the highly respected wine maker Jim Irvine was employed as a consultant to revamp wine making techniques. The Barossa is a hot, dry wine growing region. It is characterised by cold, wet winters and dry, dusty summers. Hot winds from central Australia can be devastating. Conditions favour the thick skinned Semillon and warmer climate red varieties, Shiraz, Mourvedre and Grenache. It also produces outstanding Cabernet Sauvignon and Merlot. Chardonnays are fat and oily and Sauvignon Blanc, though not widely grown can show pungent asparagus characters which blend well with the more restrained Semillon. The impact of new wine making techniques has brought Yaldara to the forefront of Australian wine making. They have now received in excess of eighty awards with the two most notable successes being Top South Australian Chardonnay in the Sydney International Wine Makers Show and International Wine Challenge "Red Wine of the Year" for their Reserve Shiraz. Recent recognition of their "Farms" series Cabernets and Merlots suggests much more to come (12 x 75 cl)
