Pelissero FAVORITA Langhe DOC
Description: Azienda Agricola Pelissero is a family-run vine-growing estate located in the district of Treiso, in the heart of Barbaresco. Many gradual changes have been performed by the successive generations of the Pelisseros, who transformed the grape-selling activity started by Giovanni Pelissero into winemaking of all the estate-grown grapes. Winemaking takes place in a cellar surrounded by vineyards situated in a zone called Augenta. The first bottles of wine dated back to 1960 and were produced by Luigi Pelissero, whose work was followed by his son, Oenologist Giorgio who, after finishing his studies, decided to work full time at the winery. The Pelissero family takes care of all the activities from pruning the vines to marketing the wine. The estate consists of twenty hectares of vineyards which yield a total of 80,000 to 100,000 bottles of wine. The vineyard producing Favorita grapes is next to the cellar in the main vineyard. This is one of the few typical white vines from Piedmont, similar to Vermentino, whose fruit was once used as dessert, and has been used to produce Favorita wine since 1984. This is a well-structured wine which has profited from the consistency of the soil, suitable for the production of Barbaresco, that has conferred structure, complexity and persistence on the character of this enjoyable white. Pelissero's philosophy of production for either this or any of the other wines is to limit the cellar operations in order to bring to the bottle the bunch of grapes as pure as possible. The stalks are removed from the bunches, the grapes pressed, the must left to decant at room temperature for a night, then racked and put to ferment with the addition of selected yeast. A small part is produced in barriques but the procedure does not change. Then, the blending, another racking, a soft filtration and the wine is ready to be bottled. The brilliant and warm straw yellow colour is an indication of complexity and complete ripening of this wine. The accented primary aromas are followed by yeast lysis and ethereal sensations derived from the malolactic fermentation. On the palate, there is a marked acidity and a refinement that is confirmed in the aftertaste. Its delicate complexity widens the spectrum of tasting sensations, increasing its persistence on the finish. (12 x 75 cl)

The palate is clear and definite, with long and pleasant finish. IThe grapes come from selected vineyards in the villages of Monforte and Castiglione Falletto and from grapes in Pio Cesare own vineyards in the villages of Serralunga and Treiso. Description: Pale straw yellow in colour with typical aromas of lemon and straw and peach . Creamy, medium bodied wine supported by vanilla oak, producing complexity and length. The semillon and chardonnay grapes were picked at baumes to enhance the varietal characteristics and then fermented seperately with American oak. After clarification the wine was blended and stabilised prior to final filtration and bottling. Ideally consumed fresh although can be cellered for up to 2 years.
