Remaining loyal to the traditional techniques of the region, the vinification process requires the grapes to be fermented in whole clusters under a blanket of carbon dioxide optimising the freshness of the fruit. The wine is deliciously floral on the nose and possesses great smoothness on the palate with a wonderful balancing acidity. It is best enjoyed after a year or so in bottle.
