They can be quite tannic in their youth, but Troplong always seems to balance that with precocious, rich young fruits and a sublime balance that elevates the wines above the crowd. the harvest is picked entirely by hand and fermented in temperature-controlled stainless-steel vats and thereafter undergo malolactic fermentation in oak barrel of which 70% are new oak and 30% are one-year old. Here they mature for 12 to 24 months depending upon the vintage, fined with egg-whites and finally bottled. Chateau Maligny 1er Cru Classe Fourchaume Chablis
Description: Château de Maligny is owned by the Durup family. There have been Durups living in the village of Maligny since the 15th century. Jean Durup's great grandfather tended the vines of the Château Maligny for 30 years at the end of the last century. Since Jean Durup took over the family Domaine all oak has been banished from the spotless tiled Durup cellars. Wine is kept in cement vats lined with fibreglass and also stainless steel storage tanks. Apart from refrigerating the wines to remove tartarate , the wine is given the minimum amount of treatment to retain maximum character of the soils in Chablis. The result is a very consistent, successful fruity, almost flowery Chablis. with a fresh and flinty taste, exactly the correct character of the terroir. (12 x 75 cl)
