Wente MORNING FOG Chardonnay San Fransisco Bay California
Description: The Wente Chardonnay is a great example of Livermore Valley terroir. The soil shows through with a great mineral fl avor that is surrounded by apples, citrus, and pears, with a slight hint of oak. Vineyard: Livermore Valley, one of the only coastal valleys in California with an east-west orientation, has many meso-climates that are excellent for growing Chardonnay. Planted on various clones, which are all picked and vinified separately, the variation within the vineyard adds to complexity of this wine. Fermentation: 72% barrel fermented in neutral French and American oak, 38% fermented in stainless steel. Aging: The barrel-fermented portion was aged sur lie for 10 months. Batonnage, the stirring of the barrels, was performed monthly. The stainless steel portion was aged on the lees for 10 months. (12 x 75 cl)

Domaine Corinne Perchaud Chablis 1er Cru Fourchaume
Description: The beautifully aromatic Chablis 1er Cru ‘Fourchaume’ has excellent depth on the palate, balanced by minerally fruit and refreshing acidity. The vineyard has a high proportion of limestone and the grapes are fermented entirely in stainless steel to preserve the purity of the fruit. The wine then spends time on its lees in order to increase its complexity and to add the alluring creamy texture. The resulting wine is rich, yet has that characteristic Chablis steeliness. Corinne Perchaud is married to Jean-Pierre Grossot and together they make a formidable pair. Like Grossot’s, her wines are elegant, intense and nervy with superb definition, great length and a wonderful capacity for ageing. (12 x 75 cl)

Description: Ageing wines from Jerez takes place through the laborious, precise process known as the Criaderas y Solera system. In this process, the younger wines are blended slowly and methodically with other more mature ones. The older wines impart their flavour to the younger ones, while the latter freshen the former due to their youth and strength. All the grapes are from vineyards owned by González Byass in the Jerez Superior area and after approximately 4 years it is ready to drink.
