This appellation produces 130ha of village-appellation wine. Located at the mouth of a valley which offers some of the most appealing vistas to be found anywhere in the Côte d'Or, the vineyards are arranged in a V-shape, and produce a variety of wine styles. However, these terroirs do have something in common, as the wines tend to be refined, elegant and charming. The soils are essentially pebbly limestone. The grapes were hand picked at optimum maturity and put into small perforated boxes. Patriat has two sorting tables, with 10 people per table, looking for any grape that isn't fit to go into the fermenting vat. The grapes were destemmed and the whole, uncrushed berries were put into open wooden foudres. No yeasts, enzymes or tannins were added, to avoid altering the character of the must. The cold soak lasted for 5-6 days. Patriat doesn't plunge during this first week, as he thinks only bitter tannins are extracted at this stage. Once fermentation starts, the cap is plunged by foot . Maceration lasts for about three weeks, and malolactic happens ''when it happens''. The wine was matured in barrel for 15 months without racking . The wine was neither fined nor filtered before bottling. (6 x 75 cl)

Description: Fruit for the Ebenezer range of wines are picked predominantly from 30 to 80 year old Barossa vines ensuring that the wines are rich and full bodied with intense varietal and regional character. When selecting the fruit Barossa Valley Estate look at all their vineyards and pick the best blocks from a variety of soil types to ensure complexity of fruit flavours. The Maturation process occurred in 50% new and 50% 1 to 2 year old American oak for 18 months. This Shiraz has a deep red colour with dark purple hues. The bouquet is showing lifted plum fruit with savoury smoked ham characters from oak maturation. The palate is sweet, with luscious fruit on the front, as well as dark plum and blackberry with subtle charry oak complexity on the back palate. A well balanced wine showing good harmony between fruit and oak. This wine can be cellared up to 10 years. (6 x 75 cl)

Fattoria Dei Barbi BRUSCO DEI BARBI IGT Tuscany
Description: The Colombini family has had properties in Montalcino since 1352 and has owned the Fattoria dei Barbi since 1790. The vineyards cover an area of 100 hectares, approximately 35% of the whole estate. The exposure is east, south-east and the soil type is composed prevalently of Galestro with small components of mud and clay, only a minor part of it has a relevant presence of eocenic sands. The Sangiovese grapes are de-stemmed but not pressed, and pumped into stainless steel tanks for a prolonged fermentation. The wine is kept on the lees under a carbon dioxide blanket for three months to develop its unique character. It is then pressed and aged for one year in the tank followed by six months bottle conditioning before release. The wine takes its name from the brigand, or highway man, Bruscone , who lived in the Fattoria dei Barbi woods, with production of Brusco starting in the 1970's. Giovanni Colombini who originally produced this wine has created a strong bodied wine with fruity and spicy aromas, good tannic structure and a nice finish. (6 x 75 cl)
