Margan Shiraz SAIGNEE Hunter Valley New South Wales Australia
Description: TASTING NOTES : Light red in colour with a full soft nose. The characters of the wine are a combination of spicy pepper from the shiraz and lifted strawberry aromatics from the process. The palate is soft and full with crisp clean acid. It is a dry style of rose which is not a reflection of the presence of red grape tannins, rather the lack of residual sugar. The wine has been made to drink as a young wine and should be consumed nicely chilled. An ideal accompaniment to salads, pasta or barbeques. WINEMAKERS NOTES : The grapes for this wine were selected from three separate vineyard sites. The fruit was all picked at optimum ripeness and fermented separately. Each parcel of fruit was selected for the final blend as a result of its individual fruit characters. The Fordwich Hill portion was fermented in new French oak and left on its own lees for two months. This portion was given a further four months in barrel. The balance was fermented without oak. The wine was blended using the various proportions of the individual parcels to provide a wine with a multi-layered palate of intense primary fruit characters enhanced by the soft French oak characters. Minimal filtration was used on the wine prior to bottling (12 x 75 cl)

McGuigan GENUS 4 Shiraz Hunter Valley
Description: A deep scarlet purple shiraz it has a nose showing great regional intense definition along with cassis chocolate aromas and charred vanillan oak. A full bodied wine with soft fine grained tannins, rich palate and good persistence. The strong Shiraz fruit flavours of pepper, spice and cherry are complimented by a subtle underlay of coconut / vanillan American oak. The old Shiraz vines at Sandy Hollow have producd an intensely flavoured ripe fruit flavoured wine. The grapes were crushed and chilled into a rotofermenter where they were allowed to cold soak for 3 days prior to inoculation with selected yeast strains. The grapes were then pressed in a bucher tank press prior to being stored in new Schahinger American and Hungarian oak barriques for 12 months. The wine was racked on a three monthly basis prior to being racked to tank and lightly fined using egg whites. No filtration was carried out during the winemaking process. (6 x 75 cl)

McWilliams ELIZABETH Semillon Mount Pleasant New South Wales
Description: Colour: Very pale yellow straw. Bouquet: A complex, intense and integrated mix of citrus, lime, lemon blossom and herbs. Palate: Lime and citrus flavours, supported by a fine acid structure and cut grass complexity. Cellar: Can support careful cellaring for up to ten years from vintage. Winemaking Notes After crushing and de-stemming, the must was chilled and the juice drained off. After cold settling for 48 hours, the clear juice was racked, inoculated with a neutral yeast and allowed to ferment slowly at a cool temperature for a period of four weeks. One month after fermentation, the wine was blended, heat and cold stabilised, and sterile filtered. The wine was bottled in July 2000. Handling has been kept to a minimum to protect the wine's delicate, pure fruit flavours. Background Information. A 100 per cent Semillon sourced primarily from Mount Pleasant's Lovedale and Middle Creek vineyards, with the balance from a selection of the best and oldest vineyard sites in Pokolbin, in the lower Hunter ValleyThe grapes were hand-picked from late January to mid-February.
