Daniel Dampt Chablis 1er Cru Les Lys
Description: Wine is ingrained in Daniel Dampts family history. Winegrowers dating back over 150 years, his domaine has merged with that of his father-in-law's, Jean Defaix and the estate currently counts, 26 hectares of vines in production, including 13 hectares of Chablis. An additional 13 hectares of Chablis 1er Cru are also owned from which Vaillons, Fourchaume, Cote de Lechet, Les Lys and Beauroy are produced. The recently constructed cellar is equipped with stainless steel tanks combined with the purchase of modern, powerful cellar equipment has enabled the group to increase its production, because all of Daniel Dampt's wines are produced and bottled by the domaine. This means all the wines are made from grapes grown in his own vineyards, which is a crucial factor in establishing the personality and quality of the wines. Known as the 'Gateway to Burgundy', the name Chablis conjures up great images in people's minds. The character of the wines is thanks to the Chardonnay vines being planted on unique chalky limestone and clay. When this is combined with a great climate where the sun shines throughout the growing season, the vineyard slopes can produce great wines. Fresh acidity on a very pretty mineral structure, this yellow coloured wine has all the elegance of the chardonnay grapes stemming from fifty years old vines on this exceptionnal land. (12 x 75 cl)

Domaine Alain Geoffroy BEAUROY 1er Cru Chablis
Description: The Domaine Alain Geoffroy Chablis vineyards are amongst the oldest vineyards in France. In the 12th century, the monks of Citeaux cultivated and carefully tended these vineyards, which produced an agreeable nectar. Today, at Domaine Alain Geoffroy, they continue to cherish the vines so that they produce wines that are not just thirst-quenchers but provide everyone with pleasure. All the Chablis wines are produced on a specific geological zone known as Kimmeridgian , which is composed of calcareous clay and oyster fossils. It is from the incredible potential of this soil that our wine draws all its richness of fragrance and flavour, and notably its high mineral content. When the grapes arrive they are immediately pressed in pneumatic presses. After pressing, the juice undergoes static settling for 24 hours in vats, which eliminates the larger particles of must. The following stages are alcoholic fermentation, which lasts for 15 days, then malolactic fermentation, which lasts around a month . Lastly, the wine ages in tank on a fine bed of lees. The vines for this Chardonnay are between 30 and 45 years old. This has resulted in a pale light gold coloured wine with slight greenish glints that are bright, luminous and limpid. The nose is full of sunshine, gaiety, beauty and maturity. A rich, splendid bouquet of a multitude of flowers. The taste is full and round (6 x 75 cl)

Domaine Bernard Defaix Chablis Grand Cru Vaudesir
Description: Bernard Defaix, fourth generation of a family of vine-growers, started in 1959 with 2 hectares. Today the domain stretches over 26 hectares including vineyards in Chablis Premier Cru , Chablis and Petit Chablis. Today, the Domaine is run by Bernard Defaix's sons Sylvain and Didier and this grand cru is situated on the west/south-west extremity of the seven grands crus of Chablis. The cuvee of Bougros comes from a vine located on the top of the slope, so the exposure to the sun is excellent. Vinification is achieved in an old arched cellar in the center of the village, where the very first wines of Domaine Bernard Defaix were vinified. The wine is fermented and aged in oak barrels with regular 'batonnage.' Finally, the wine is bottled without filtration after 15 months ageing. This has produced a lovely yellow coloured wine with very pleasant flavours of flowers, honeysuckle in particular, and mineral notes. The flavours have developed a complex, full mouth with good length. (12 x 75 cl)
