This Vin de Paille 'Straw wine' is made with Savagnin, Chardonnay and Poulsard grapes, hanged and dried for three months in airy and dry rooms. Slightly 'passerillees' the grapes are usually pressed in the early months of the new year and matured for three years in oak casks. Once again, Rolet's Vin de Paille rate amongst the very best in the Jura, it is sweet, round and delicious with a lively, refreshing, tangy, Tokaji-like balance brought in by the Savagnin natural acidity. An Estate which reflects the image of an ever-changing Jura and family enterprise, this Estate was created in the early 40's by Desire Rolet. Today, his children have taken over and share the various responsibilities of the management of the Estate. Available in 37.5 cl Half Bottles. (12 x 37.5 cl)

Domaine Rolet Arbois Vin Jaune Jura Savoie
Description: This Estate was created in the early 1940's by Desire Rolet and today it is still a family business as his children have taken over and share the various responsibilities of managing the Estate. Spread accross 35 hectares of Arbois AOC on the Arbois and Montigny communes and a further 20 hectares in Cotes du Jura AOC where white vine varieties are dominant. This has the same yeasty flor and style as a fino sherry, and the startlingly intense flavours of the Savagnin grape become more evident as it matures. Made exclusively with Jura's Savagnin grapes in a way which defies the most elementary oenological laws: 6 years in 3 ¼ filled oak barrels without 'ouillage' so that nothing disturbs the thin surface film, a veil of live yeasts, responsible for the 'yellow' colour of the wine. The wine is then bottled in 'Clavelins' holding 63cl, which corresponds to 1 litre of the wine harvested 6 years earlier. At this point the wine is almost indestructible and will age for 100 years or more. (6 x 62 cl)
