Description: The terroir that yields Castello di Ama’s Rose is the same that yields its Chianti Classico. These vineyards were planted between 1964 and 1978, trained partly to vertical trellis and partly to Open Lyre. The wine, 90% sangiovese and 10% canaiolo, gains its considerable body from bleeding-off lots that will produce Chianti Classico; for this reason, the resulting wine is closer to a young red wine than to a white. Excellent structure and good holding potential over time are its principal qualities. But its fresh approachability, a hallmark of wines from fully ripe sangiovese, and the lushness of its fragrances combine to ensure that this rosato can be appreciated right from its first months in the bottle. Castello di Ama VINSANTO Tuscany
Description: Voted Winery of the Year 2005 by the Gambero Rosso, Ama’s history goes back to 1972 when four Roman families united to purchase the Ama estate with the goal of restoring it to the splendour of its 18th century heyday. New cellars were built, new plantings began with experimentation into non-indigenous varietals, and new methods of viticulture were pursued while in 1982 Marco Pallanti was introduced as winemaker. The grapes that produce this Vinsanto were selected from the best malvasia bianca and trebbiano fruit from a total area of about 5 hectares in the Bellavista, Casuccia, and Bertinga vineyards. No more than 1-2 clusters per vine are suitable for producing this wine; such rigorous standards are necessary to ensure absolutely healthy, fully ripe grapes. Using the most experienced hand-harvested pickers a total of 214 quintals of exceptional malvasia and trebbiano toscano was selected.. The clusters, tied together and hung in special well-ventilated, open drying-lofts over a period of 60 days, lost 70% of their weight, thus concentrating their sugars. The whole clusters were then crushed and lightly pressed. The must was clarified by settling, and 200-litre lots then went into used Allier oak barriques. It then underwent the traditional fermentation in stages until the levels of alcohol and residual sugars brought an end to the fermentation. Finally, the Vinsanto was racked off the gross lees and returned to barrels to undergo 6 more years of oak ageing. Available in 37.5 cl Half Bottles. (6 x 37.5 cl)

Castello di Bossi GIROLAMO Toscana IGT
Description: The Bossi castle is situated in the Castelnuovo Berardenga commune in the midst of evergreen woods and fields full of fossil-rich minerals and has been a focus of local history for many centuries. Bought by the Bacci family it has been totally restored while the Bossi wines, made by oenologist Alberto Antonioni, have exalted fruit flavours; they are smooth, rich and complex, a far cry from the rustic tongue-dissolvers one associates with basic Chianti. The Girolamo is a lush plush Merlot from 30-year-old vines matured in French oak barrels for 12 months. A gloriously fruity wine reminiscent of just-made raspberry jam, silky and ample in the mouth. Castello di Volpaia BALIFICO IGT Toscana
Description: Youthful soft red, vivid berry fruit aromas with creamy new oak overtones. Smooth velvety palate with classic fruit and spicy tannins leading to a long, elegant finish. One of the most famous estates in Chianti Classico, Castello di Volpaia is owned by the elegant Giovanella Stianti and run by enologist Maurizio Castelli. The modern winemaking equipment is discreetly arranged within the confines of the medieval hamlet of Volpaia near Radda. The vineyards include some of the highest in the Classico area, up to 600m. This influences the style of the Volpaia wines, which are always rich in floral perfumes and elegant in texture. This is true across the range, from the beautifully balanced Chianti Classico, to the more oaky and developed Riserva and through to the two fine “supertuscans”. Coltassala is mainly Sangiovese, with ripe plummy fruit, controlled oak flavours and fine tannins. Balifico adds one third Cabernet Sauvignon to the Sangiovese, bringing a more berry fruity character and equally notable aromatic finish (6 x 75 cl)
