Cavalchina Bianco di Custoza DOC Veneto
Description: Cavalchina is the name of the area where the winery has been built and is probably named after the old residence of the Count Cavalchini. The estate, in the south east of the Garda amphitheatre, was established at the beginning of the last century. The most important aspect of Azienda Agricola Cavalchina is that in 1962 it was the first producer to put Custoza as the name of the wine from the region and was made with Fernanda, Trebbiano and Garganega grapes. Today, this wine is a blend of 30% Fernanda , 30% Trebbiano, 30% Garganega, 10% Trebbianello This wine came from the vineyards in Casella, Mandolara, Bacino, Bianchette, Cavalchina e Monte. Here each variety matures at a slightly different time, the beginning of September for the Trebbianello, late September for the Fernanda and the beginning of October for Trebbiano and Garganega. This means that each variety has to be vinified separately. The grapes, manually harvested into small boxes to prevent crushing, are then destalked and pressed. Only the Fernanda, with its slightly aromatic character, is briefly macerated before the pressing. The must, after clarification, ferments for 10-15 days at a temperature of around 18ºC. The decision whether to have a malolactic fermentation, to compensate possible excesses of acidity, depends on each vintage. Next the wines are left on their lees to maintain their freshness, up to late January or early February, at which point the final blend is assembled. This wine is a lovely pale yellow colour with a lively, lemony, punchy flavours and a classic leafy marzipan-spiked finish. (12 x 75 cl)

Maculan ACINOBILI Breganze
Description: For three generations the Maculan family has been selecting and vinifying the best grapes in Breganze, an enchanting village, set like a small jewel at the foot of the Alps in the Veneto region. The Maculan Farm consists of 11 hectares of estate owned vineyards in the commune of Breganze. 24 additional hectares are leased within the DOC zone of Breganze. Maculan also works with other growers, managing production of up to 50 hectares in the DOC zone of Breganze. The winery is located in the historic center of Breganze and provides the link between tradition and innovative technology. Tradition taught Maculan to judiciously choose the vineyards, hand harvest only the best bunches of grapes and to develop the wines in barrique. From modern technology, Maculan have learned to harvest only into small cases, to directly press whole grapes, and to accurately control the fermentation with the aid of the most advanced information available. This blend of 85% Vespaiola, 10% Garganega and 5% Tocai Friulano it is aged 2 years in new Nevers barriques, followed by 6 months in bottle. This has produced a brilliant antique gold coloured wine. The great, intense and spicy bouquet is showing hints of acacia honey, dry fruit, raisins and flint. An elegant and sumptuous tasting wine with optimal body and massive structure it has a profound backbone with a lingering persistence. This dessert wine comes in 37.5 cl bottles and is available in limited quantities. (24 x 37.5 cl)
