The only blend in the range, Wynns Coonawarra Estate Cabernet/Shiraz/Merlot captures all the elegant fruit character that Coonawarra has to offer in a wine that drinks best while relatively young. The Cabernet provides flavour, length and structure; the Shiraz imparts a spicy complexity and richness, while the Merlot adds softness. The resulting red offers a rich balance of varietal characters in a smooth and approachable wine. Grape variety: Cabernet Sauvignon , Shiraz and Merlot . Oak Maturation: Matured for 10 months in a mix of new and used American and French oak barrels. Colour: Deep red with purple hues. Nose: Fragrant, leafy aromas with hints of mint and eucalyptus underlined with dusty oak. Description: Red black in colour, this Cabernet Merlot is true to style with a powerful nose of ripe cassis fruit, dark chocolate and smoky oak. Rich black fruit flavours dominate the palate, dense and dark in character, followed by a big tannin backbone finishing firm and textured. This wine will improve and soften with cellaring and will open up with decanting before drinking. A significant proportion of the Cabernet Sauvignon was barrel fermented in new AP Johns American Oak. The Merlot component was fermented in small 0.5 tonne punch-down ferments. The whole blend was then matured in New and Second-fill , American and French Oak for 20 months prior to egg white fining and bottling. (12 x 75 cl)

Description: The Parker Estate Vineyard, situated at the Southern end of Coonawarra, was established in 1985 on the rich Terra Rossa soil over limestone of Coonawarra and carries Cabernet Sauvignon as the predominant variety with minor plantings of Merlot and Petit Verdot. Each vintage small quantities of the best fruit is selected for the Terra Rossa First Growth. If in any one year the grapes do not reach the high standard set, then no Terra Rossa First Growth is made, as was the case in 1992, 1995, 1997 & 2002 . Description: The Parker Estate Vineyard, situated at the Southern end of Coonawarra, was established in 1985 on the rich Terra Rossa soil over limestone of Coonawarra and carries Cabernet Sauvignon as the predominant variety with minor plantings of Merlot and Petit Verdot. Deep crimson red in colour with purple tinges. The nose shows intense liquorice fruit with mocha coffee, mineral, violets and smoky cedar oak aromas. The palate is strong and firm with liquorice and cedar flavours following onto a long finish with complex tannin flavours and mouth feel. Description: A soft, silky texture and medium weight, makes it ideal for drinking with modern Mediterranean-style foods. The fermented wine is matured for twelve months in one year old American and French oak barrels, which contribute vanillin and spice flavours while still allowing the fine Coonawarra fruit flavours to dominate the palate. The wine's usual composition is 80% Shiraz, 10% Cabernet Sauvignon and 10% Malbec. Hollick is an independent, family-owned winery, located on one of the original John Riddoch Coonawarra 'blocks' in the cool south east corner of South Australia. Planting of the classic varieties of Cabernet Sauvignon and Riesling began in 1975 under the guidance of lan Hollick. lan's involvement with viticulture goes back to his childhood in Mildura as the son of a soldier settler fruit blocker. After studying Agricultural Science, lan worked for Mildara Wines in Coonawarra, progressing to become manager of Mildara vineyards nationally and the Coonawarra winery. With a vision of a great future for Coonawarra, lan purchased 22 hectares of prime Terra Rossa land in 1974. The Hollick Winery was established in 1984 and a year later Hollick won the coveted Jimmy Watson Trophy for the best one-year old red wine. The property expanded to more than 100 hectares following the purchase of the Wilgha property in 1987. Hollick has recently expanded north of Coonawarra at Wrattonbully, a region we will hear a lot more about in the future. Shiraz will be the main production for Hollick in this region. New to the range is Neilson's Merlot named after the Australian lyric poet, John Shaw Neilson who owned the historic building which now homes the Cellar Door sales. The 1998 Cabernet Merlot was selected for British Airways First Class and the 1998 Wilgha Shiraz won a gold in the 2001 International Wine Challenge (12 x 75 cl)
