A range of soils-from alluvial to lean volcanic-contributes to the diverse flavours in this wine. Mondavi chose 35% of the grapes from the Oakville AVA, including 33% from Robert Mondavi To Kalon Vineyard, and 22% from the Stags Leap District AVA, including 7% from Robert Mondavi Wappo Hill Vineyard. The balance of the grapes came from the Rutherford AVA and other Napa Valley vineyards. Ripe dark berry, spice, violet and chocolate weave through the aromas and smooth, velvety flavours of this Napa Valley CabernetSauvignon. These rich, expressive flavours come from the soils and climates of vineyards located primarily in the geographic center of Napa Valley. Firm tannins support the abundant fruit character and give the wine excellent length on the palate. Fermentation with both cultured and native yeast strains gives layers of nuance to the wine, and extended skin contact intensifies varietal complexity and softens tannins.
