Description: Made from selected Sauvignon Blanc vineyard,s considered to be some of the best parcels throughout the Walker Bay region, the wines have been sourced with 33% coming from Vrede, Heme-en-Aarde Valley, Walker Bay; 33% Wildekrans, Botriver, Walker Bay and 33% from Darling. The Admiralty House range has allowed Cape Bay Winery to create wines with more focus and classic styling. The grapes are destemmed and crushed at cold temperatures using dry ice to prevent oxidation of the must and to preserve flavours and aromas. The must then undergoes a period of skin contact, 24 hours at 10ºC, to capture favourable flavours from the skins. The skins are pressed lightly and the juice left to settle for a period of 72 hours, after which the fermentation is started in stainless steel tanks and is maintained at temperatures between 11 & 13ºC until the wine is dry. Typically cool climate Sauvignon with a fresh, crisp fruit structure in a wide spectrum of flavours and aromas ranging from ripe passion and kiwi fruit to fig and fresh cut grass, superbly balanced with a zingy, minerally acidity. Description: The Island is rich in winemaking history. In 1891, Captain J.S. Hamilton, the president of Pelee Island Wine Company and J.S. Hamilton & Co., began construction of a three-storey building made from stone quarried on Pelee Island. Named the Wine House, it was located on five acres near the west dock on Pelee Island. From the winepress on the third floor, juice was piped to thousand-gallon vats on the lowest level. Initially, the cellar of the Wine House contained between 15 and 18 of these vats. In 1979 the Pelee Island Winery was re-established by a group committed not just to building a world-class winery, but also to the natural heritage of the island. The century old tradition of grape growing on the island continues. Pelee Island Winery now produce around 2 dozen different wines, and are the largest VQA wine producer in Ontario. Description: John Joslin was a farmer in Essex and also had a business in Belgium. Together, with his wife Jennifer, they decided to sell up and cruise the world in their custom built yacht 'Dancing Wave'. They did this for six years before dropping anchor in New Zealand. After one visit to Marlborough the yacht was sold and 20 acres in the heart of the wine growing region was bought. Marlborough was chosen for its international reputation as a premium wine-growing region with one of the longest ripening periods in the world. The vineyard was named 'Le Grys' which was Jennifer's maiden name and planted varieties include Sauvignon Blanc, Pinot Noir and Chardonnay. Finally. a unique Mud block house was built in the vineyard and hence the name of the company was born and in 1996 the first vintage was released. This wine is made from a 50:50 blend of two batches of grapes. One came from a new block harvested for the first time near the mouth of the Awatere river, known as the Castles. The other from a Mud House run vineyard on Conders Bend, very close to the original Mud House Vineyard where it all started. The grapes were machine harvested under cool early morning conditions, pressed immediately, and the resulting juice was fermented very cool retaining all the fruit characters and aromatics, without introducing harsh skin characters that result from warm handling or skin contact. This is a pale straw coloured Sauvignon Blanc with intense passionfruit and currant aromas showing notes of mineral characters. (12 x 75 cl) Price: £172.03
