Description: The Baldes family has been making Cahors since 1830. The vineyards comprise 40 hectares of prime south-facing vineyard sites by Puy l'Eveque and contain the usual mixture of Malbec, Merlot and Tannat. The emphasis on terroir is exemplified most purely in the Clos Triguedina which is aged in large old oak casks for twelve to eighteen months. The flavours are fabulous. Description: The Baldes family has been making Cahors since 1830. The vineyards comprise 40 hectares of prime south-facing vineyard sites by Puy l'Eveque and contain the usual mixture of Malbec, Merlot and Tannat. Prince Probus, named after the Roman emperor who repealed Domitian's edict and allowed vines to be planted again in the region, is a cuvee of older vines aged in a mixture of new and old oak barrels for nine to twelve months. With its glossy purple colour, attractive nose of blackberries and sloes, the Probus is very polished in the mouth, with mint and vanilla from the new oak, ripe berry fruit and a long finish. Description: The Baldes family has been making Cahors since 1830. The vineyards comprise 40 hectares of prime south-facing vineyard sites by Puy l'Eveque and contain the usual mixture of Malbec, Merlot and Tannat. Using evidence garnered from old documents Jean-Luc Baldes has been experimenting in a corner of his cellar over the years with small batches of grapes and, now, finally, has produced this special limited release from his oldest vines in the best-located vineyards. Apparently, it is all in the timing and the ingredients as selected super-ripe grapes are put into a vat, heated quickly to nearly 60 degrees centigrade and the resulting juice goes into new oak barrels to brood and treacle darkly awhile. The resulting style is unique dry, grippy, herby, yet also smooth and port-like with a whisper of prunes. (6 x 75 cl) Price: £194.97
