The herby, honey, spicy nose with hints of raisen is showing rich spicy, marmalade flavours on the palate. Thick textured and extremely sweet the long finish completes this well balanced wine. Jackson Wine Estates LA CREMA Pinot Noir Anderson Valley California
Description: Part of Jackson Wine Estates, La Crema winery was founded in 1979 and quickly established itself as a pioneer for intensely flavoured Chardonnay and Pinot Noir. This wine is from the Anderson Valley known for sloping hillside benches thta are blanketed by cool fog from the nearby Pacific Ocean during the heat of the summer growing season. These moderating conditions are ideal in cultivating Pinot Noir with naturally bright acidity and delicate red cherry and cranberry fruit aromas. The Anderson Valley is Mendocino’s premier growing region for Pinot Noir and this wine used the Dijon, heirloom Martini and Pommard clones to enhance the aroma and complexity. In the vineyard fruit-thinning is undertaken to remove late flowering clusters ensuring even ripening throughout the vineyards. Next the fruit is handpicked from the cool climate vineyards and delivered to the winery in small half ton bins to protect the integrity of the fruit. Once in the winery the Pinot Noir grapes are put on to a belt delivery system with sorting table to purge damaged fruit. Here only 70% of the whole berries are selected before fermentation takes place for greater fruit expression. Next a five day, 48 degree cold soak is completed before fermentation so that it enhances the silky tannin texture. Open top fermentation with cap punch downs four times daily extracts precise colour before the wine is aged 10 months in 100% French oak barrels refines the finish. Finally the Pinot Noir is bottled unfiltered and unfined to express the pure character of this great varietal. Winemaker Melissa Stackhouse had the following comments to make about this wine: 'Exotic aromas are delicate and floral with a hint of blueberry and herbal black tea. The flavours are focused on lush dark red cherry fruit which provides an enticing plush texture. Bright acidity accented by cranberry and red cherries create a seductive fruit entry that leads to a broad lingering finish.' (6 x 75 cl)

Description: TASTING NOTES Guavas, pear drops and lichees with some pineapple notes on midpalate. Full ripe midpalate with fresh, clean finish. Long linger of pears and melon. A classical, well structured wine with a complex concentration of fruit and flavour. IN THE VINEYARD Chosen from selected vineyards a complement to our Flagship wine Ridgeback. THE HARVEST Grapes were handpicked in February. Healthy fruit was selected at optimal flavour ripeness. IN THE CELLAR Destalked with no crusing directly to press. Juice was settled for 18 hours at 12ºC. Must was racked and then inoculated with local, commercial yeast strain. Fermentation lasted for 21 days at 12-14ºC. A small percentage of Sauvignon Blanc was blended. Wine was lightly filtered prior to bottling in May. (12 x 75 cl)

Description: La Crema was founded in 1979 and quickly established itself as a pioneer for intensely flavoured Chardonnay and Pinot Noir from the cool Sonoma Coast. Continuing this tradition, La Crema pursues the ultimate expression of the Russian River Valley, Carneros and Anderson Valley by handcrafting wines of distinctive flavour which achieve elegance and balance The Sonoma Coast is located on the western coastal fringe of Sonoma County, starting with a narrow strip at the Mendocino County border and continuing through the mouth of the Russian River; then down to the Sonoma Carneros border of Napa. This AVA is the largest in Sonoma County yet is the least planted. Known for its dramatic flux in temperature, the warm days and cool nights allow gradual ripening of grapes with fully developed flavours, high natural acidity and low pH. The region’s cold conditions push the limits of grape growing making it particularly well suited for Chardonnay and Pinot Noir. Once in the winery this 100% Pinot Noir is aged 8 months mainly in French Oak, of which 28% are new barrels. As a result Melissa Stackhouse, La Crema Winemaker considered: 'Aromas of black cherry, licorice and anise. Description: Alan Nelson's committment to quality is reflected in the hand-crafted wines carrying the Nelson's Estate Label. These wines come from carefully chosen highest quality grapes on the Estate and have been nurtured along at every stage in their creation. Deep red with a full colour to the rim, it is soft, rich and full-bodied wine combines blackberries, dark/bitter chocolate and allspice to result in a long, lingering finish. The grapes were picked fully ripe and pump overs were vigorous and frequent while being done by hand and not by irrigation. Next, the wine was fermented completely dry before pressing which, due to the super ripe grapes, allowed a harded pressing to draw out more of the rich extracts from the grapes. After malolactic the wine received 18 months ageing in 100% French oak barrels and finally the wine was lightly filtered prior to bottling. (6 x 75 cl)

The Wente, Dijon and Rued Chardonnay clones are used in this wine to enhance dimensions of vibrancy and perfumed aromatics. In the vineyard fruit-thinning is undertaken to remove late flowering clusters ensuring even ripening throughout the vineyards. Once ready the grapes are hand-picked from cool climate vineyards, delivered to the winery in small, half ton bins to protect the integrity of the fruit. Once in the Winery a belt delivery system for whole cluster pressing is used to capture fresh fruit flavours and minerality. 100% barrel fermentation and 100% malolactic fermentation take place in French oak barrels, . Next barrel aged sur lie occurs for 10 months with bi-monthly lees stirring for creamy mouthfeel. Finally, the wine is bottled unfiltered to express the pure character of the Chardonnay. Winemaker Melissa Stackhouse had the following comments to make about this wine: 'Peach, mango, Pippen apple and lemon drop meld into a wonderful combination of fruit, which is balanced by hazelnut, ginger and subtle butterscotch. Intense pear, nectarine, and Meyer lemon lead creamy layers into the finish.' (6 x 75 cl)

Ridgeback Wines VANSHA Dry Red Paarl RSA
Description: TASTING NOTES Ripe yet restrained combo of black fruit with mulberries and strawberry jam on midpalate. Pleasantly understated smooth tannins for easy quaffability. IN THE VINEYARD Grapes from the Vansha vineyard combined with a selectively chosen variety from the Paarl region. THE HARVEST All of the above varietals were handpicked at optimal ripeness of physiological and flavour ripeness. IN THE CELLAR All of the grapes were destemmed without crushing. Wholeberry component was 80% in the fermenters. Cinsaut and Cabernet Sauvignon was fermented in stainless steel and pumped over twice daily. Shiraz was fermented in half ton fermenters and punched down three times daily. The blend was made up and consolidated, just the Cabernet and Cinsaut components completed alcoholic fermentation. Oak staves were induced just prior to fermentation to allow for some mellow oak structure. The wine was lightly filtered just before bottling in May . (12 x 75 cl)

The Royal Tokaji Wine Co Essencia 1993 vintage is a deep burnished gold colour, remarkably full bodied and luxuriously sweet showing excellent balance and structure. Tempting kumquat, orange and caramel are evident with generous hints of white chocolate and toasted bread. Fresh and long the wine is drinking very nicely now and should cellar well until 2012. Ridgeback Wines RIDGEBACK Cabernet Sauvignon Paarl RSA
Description: TASTING NOTES Dark plum with bright red tints. Pungent mulberries with loads of juicy blackcurrant and violets. Some mocha and fragrant wood spice. Elegant, subtle, fine grained tannins with fleshy mulberry fruit concentration supported by choc/mocha wood spice. IN THE VINEYARD Majestically situated on a East facing hillside with optimum gravel soils. The vineyards in their fifth year improve with each year. THE HARVEST Grapes are handpicked in February . Grapes were handpicked at physiological ripeness. IN THE CELLAR Bunches were destemmed with no crushing. 80% wholeberry was fermented in stainless steel fermenters. Gentle pumpovers twice daily to extract flavour and tannins were conducted. Fermentation with a commercial Cabernet yeast strain lasted for 10 days with careful temperature monitoring. Wine was pressed and gravity fed to 225 litre barriques for secondary malo-lactic fermentation. The wine matured for 16 months in French coopered oak. A light filtration prior ro bottling was given. (6 x 75 cl)
