Description: Gallois took over the running of his tiny family-owned property about 15 years ago. Prior to that he had been working as a restaurateur. He has 3 ha in Gevrey, making a tasting chez Gallois a fairly brief affair. For all its brevity, however, it is a fascinating tasting, for the quality of the wines improves with each visit. He is, without doubt, one of the rising stars of the appellation. His wines are rich, intense and brooding but at the same time supple and modern in style. His winemaking is fairly standard for the region. He does a 4 day cold maceration followed by approximately 14 days fermentation. The grapes are completely destalked for the Gevrey but depending on the vintage, only partially on the 1er Cru's. Ageing is in a mixture of new, one and two year old barriques and he neither fines nor filters (12 x 75 cl)
