Description: A moreish juicy fruit of cherry and black fruit is to be found on both the nose and palate. This is combined with a light cedar spice from ageing in oak. The oak ageing has integrated the wine very well. It is supple yet has a tannic edge that gives interest to the structure. (12 x 75 cl)

James Herrick Chardonnay Vin de Pays d'Oc
Description: Extended lees contact adds a rich creaminess to the fresh citrus flavours of this unoaked Chardonnay. In the heart of Languedoc in the South of France, Vignobles James Herrick are determined to do their best to control all the aspects of making wine from this delicate variety. They planted more than 170 hectares of vines in three different 'terroirs' using three different clones. The resultant knowledge of how Chardonnay behaves in different circumstances allows them to wait right until the correct moment to pick the grapes for perfect flavour. Herrick use three vineyards Domaine La Boulandiere, Domaine Les Garrigues de Truilhas and Domaine La Motte as the underlying source of Herrick Chardonnay. Here their winemaking plans reflect the philosophy about fruit complexity. Herrick aim to preserve the subtle differences of flavour found in the three single vineyards. Each vineyard's fruit is handled separately and vinified apart while using some modern protective techniques and some more traditional methods, fermentation takes place in stainless steel tanks after the juices have been settled but not filtered. The blend then forms the unique character of this great Chardonnay. As a result the James Herrick Chardonnay is always characterised by it initial freshness and an intense floral nose. Fine hints of summer fruits and delicate mineral notes are also easily recognisable. A fully complex and silky palate leads to a tangy and lingering finish as the medium weight structure gives the Herrick Chardonnay its hallmark elegance.
