A range of soils-from alluvial to lean volcanic-contributes to the diverse flavours in this wine. Mondavi chose 35% of the grapes from the Oakville AVA, including 33% from Robert Mondavi To Kalon Vineyard, and 22% from the Stags Leap District AVA, including 7% from Robert Mondavi Wappo Hill Vineyard. The balance of the grapes came from the Rutherford AVA and other Napa Valley vineyards. Ripe dark berry, spice, violet and chocolate weave through the aromas and smooth, velvety flavours of this Napa Valley Cabernet Sauvignon. These rich, expressive flavours come from the soils and climates of vineyards located primarily in the geographic center of Napa Valley. Firm tannins support the abundant fruit character and give the wine excellent length on the palate. Fermentation with both cultured and native yeast strains gives layers of nuance to the wine, and extended skin contact intensifies varietal complexity and softens tannins. Only in certain years can Mondavi make Sauvignon Blanc Botrytis as specific weather conditions are required for full Botrytis development of the grapes. In these years the Botrytis-affected clusters are hand picked when the sugar levels reached just over 40%. Harvesting these shriveled grapes is a labour of love because each cluster must be individually selected. Sauvignon Blanc and Semillon were harvested from the Robert Mondavi Wappo Hill Vineyard in the Stags Leap District AVA, on the southeastern flank of Napa Valley. Due to the mold's dehydrating effect, almost twice the normal amount of grapes is needed to make the wine, giving the wine great flavour intensity and concentration. After gently pressing the grapes as whole clusters, Mondavi fermented the juice in 60-gallon French oak barrels to give the wine complexity and depth. The wine fermented slowly for two months until it reached 13% alcohol, at which time the yeast activity naturally stopped, leaving a residual sugar of 16.6%. Finally, the wine was aged on the yeast lees and each barrel is gently hand-stirred once a month, to increase the creamy texture of the wine, during the 18 months of barrel ageing. The lush, opulent flavours are the result of Botrytis cinerea while it has concentrated the grape sugars and intensified the wine's complex aromas and flavours. Ageing in French oak barrels has woven vanilla nuances through the rich layers of honey, apricot and toasted hazelnut to produce an enjoyable wine of power and intensity. Available in half bottles.

Representing the best of California wine growing regions, including the legendary Napa Valley, each of the wines offers unique qualities and characteristics. Robert Mondavi have long recognized the distinctive vineyards of California's coast. For decades they have sourced fruit from coastal regions, and in 1994 introduced Robert Mondavi Private Selection wines to exhibit the high quality and character of the coastal grapes and vineyards. For vivid fruit expression, Mondavi harvested 95% of the grapes from Monterey County, with the balance from Santa Barbara and San Luis Obispo Counties. Approximately half of the Pinot Noir grapes were harvested from its own vineyards, the balance from well known local growers. This wine has a little Syrah and this has come from both San Luis Obispo and Monterey Counties. To achieve the fruit-forward style of this Pinot Noir Mondavi lightly crushed the grapes and fermented the must in temperature controlled tanks. After the wine fermented dry , it was left on the skins with the wine for a total of 13 days to naturally soften tannins and develop varietal complexity. The wine completed malolactic fermentation for roundness and depth and was aged for five months, in a combination of new and older French and American oak barrels, to add toasty nuances to the lush fruit flavours. Additionally, a blend of 5% Syrah enhances the spicy profile of the wine. The wine's silky layers of cherry, raspberry and red plum intertwine with fragrant allspice and floral accents. Ageing in small, French oak barrels adds spicy, toasty nuances that continue through the lingering finish. (6 x 75 cl)
