Description: Tasting Note Fresh, bright and elegant with an abundance of pure, blackcurrant fruit and even a touch of Bordeaux-like herbaceousness. A bit about Springfield Estate Brother and sister team Abrie and Jeanette Bruwer are the complete opposite of your typical university trained have-cultured-yeast-will-travel flying winemakers. Description: A rich, full bodied Cabernet Sauvignon made using fruit mostly from the warm Riverland and Murray Darling regions. After harvest the wine is traditionally fermented in stainless steel to extract the maximum colour and fruit from the grapes. McGuigan GENUS 4 Cabernet Sauvignon Barossa Valley
Description: Deep purple coloured Cabernet Sauvignon with a berry fruit and buttery toasted coffee oak dominating the nose. A full bodied fleshy round wine with a soft tannin structure it is displaying Blueberry fruit and toasted French oak on the palate to produce a supple rich wine. The ripe Cabernet fruit was harvested predominantly from old vine located in the Upper Hunter Valley. Machine harvested at night and transported to the Pokolbin Winery, the grapes were crushed and cold soaked for 5 days prior to inoculation with Bordeaux Red yeast. The ferment was allowed to warm to 28 degrees and as a result produced the warm secondary alcohols that give the wine mid palate sweetness. Next, the wine was matured in one and two year old French oak for 12 months prior to being transferred to stainless steel, ready for bottling. (6 x 75 cl)

Description: Bright, crimson red with youthful purple hues, this is a very fragrant wine showing perfumes of fresh berries and spicy oak on the nose. On the palate, it has flavours of currants, mint and tea leaf with finesse and length from the French oak. Time in the bottle has allowed the warm, generous fruit, the spicy oak and elegant tannins to knit together well and the result is a beautifully balanced wine with tremendous depth and length. This wine is a blend of 90% Cabernet Sauvignon and a touch of 10% Merlot from the Clare Valley here the varieties were matured separately in barriques, of which 35% was new French oak, for 18 months.Mount Horrocks Wines is operated by proprietor/winemaker Stephanie Toole, who restricts production to approximately 4,500 cases per annum in order to achieve her aims of quality and single vineyard expression. Description: Over 20 years ago, the pioneering Norwegian Armador, Dan Odfjell discovered and fell in love with a small corner of the famous Maipo Valley, Chile. Born of rain in Bergen, Norway, he could not resist the attraction of the austral sun in this Virgilian setting. Serendipity would later show that he had found land in Chile's premium red wine producing valley, where vitis vinifera has been cultivated since the 17th century. Here a soothing coastal breeze produces a microclimate conducive to distinct and beautiful wines on the 85 hectares planted to Cabernet Sauvignon, Merlot, Carmenere, Syrah, Cabernet Franc and Malbec. This hand harvested Cabernet Sauvignon has a little Merlot and Carmenere is part aged in oak to produce an intriguing and full-bodied style that is tasty and very drinkable. The colour is an intense ruby with violet reflections and offers plenty of black and red berry flavours showing a hint of the typical licorice a real reflection of Odfjell's terroir. Here the nose is completed with a touch of vanilla as a nice complement. Description: This wine is made from fruit grown on the historic 150 year old Turkey Flat vineyard. The Cabernet Sauvignon vines are planted on the river flat near the cellar door where they thrive on deep soils without the need for irrigation. Cabernet Sauvignon vines produce fruit of exceptional richness and concentration when grown in sites such as this. What sets Cabernet Sauvignon apart is its ability to travel, to set down its roots in distant lands and still produce something that is recognisably Cabernet, whatever the circumstances and conditions. Whilst the Barossa Valley has largely earned its reputation for making 'big' reds with the Shiraz grape variety, this wine is certainly proof that the Barossa can produce Cabernet with power and concentration. This is a wine of intensity, elegance and long term ageing potential, displaying classic Cabernet aromatics of red and black currants, a touch of olive, blueberries, cedar, spice and subtle tobacco notes. Perfectly focused and balanced; very good tannin and oak management. Whilst full bodied and intense, this wine has a fine even structure and slick ripe tannins from extended maceration on skins. Description: The Cabernet Sauvignon was grown on the Arbuckle-Positas, Arbuckle-San Ysidro Complex and Nacimiento-Los Osos. The terrain is rolling grassland hills, dotted with Oaks , and in this case Seven Oaks. In addition to the Cabernet Sauvignon 87% there is a little Merlot 11.1%, Petite Sirah 5.1%, Zinfandel 1.2%, Petite Verdot 1.2% and Syrah 0.7%. The vines are mostly own-rooted with a clonal selection from the old Estrella River Winery vineyard. The Cabernet Sauvignon clone evidences tiny berries with enticing forward fruit flavors. The 2001 vintage produced some outstanding red wines, although very similar to the vintage of 2000. However, it required longer grape hang time to achieve optimum development of colour, flavour and fragrance.
