Paul Cluver Cabernet Sauvignon Elgin RSA
Description: Due to the cool climate in Elgin the Cabernet Sauvignon is planted on a Northwest-facing slope, we also used the early ripening 163 clone and the rootstock also enhances earlier ripening. All this is done to ensure that we will get optimal ripeness even in our cooler climate. This wine shows typical Cabernet Sauvignon flavours, lots of blackberry and blackcurrant fruit on the nose and a well-integrated toastiness from the oak. The palate is very complex with hints of cedar wood and nuts with a well-structured body, packed with fruit and the after taste is long and lingering. (6 x 75 cl)

Jim Barry THE COVER DRIVE Cabernet Sauvignon South Australia
Description: Situated in the cool uplands of the North Mount Lofty ranges about 50 km north of Adelaide, the vineyards of Jim Barry were established in Clare in 1959. This is a family run winery committed to producing quality wines through an innovative approach to viticulture and winemaking technology. As a result of this in Jim barry purchased great vine growing land on the southern boundary of Coonawarra. It was formally the old Penola cricket ground, which first saw a ball bowled in anger and the flashing cover drives of the local champions in 1950. Sadly, the ground closed in 1996 and soon afterwards Jim Barry purchased the 30 acre property and planted a Cabernet Sauvignon vineyard. However, the original pavilion and pitch have been retained, thus preserving an important piece of Coonawarra sporting history. Fruit from this vineyard, along with selected parcels of fruit from Jim Barry's other family owned Cabernet Sauvignon vineyards in the Clare Valley have been blended to produce a wine that is rich, soft and approachable. Fruit from the Clare Valley and Coonawarra have been used to produce a dark red coloured wine with ripe blackberry, mint and sweet oak aromas. The palate is rich and full bodied with ripe, sweet blackberry and mint flavours, while it shows firm, but finely grained tannins complemented by a lingering finish. (6 x 75 cl)

Description: Bright, crimson red with youthful purple hues, this is a very fragrant wine showing perfumes of fresh berries and spicy oak on the nose. On the palate, it has flavours of currants, mint and tea leaf with finesse and length from the French oak. Time in the bottle has allowed the warm, generous fruit, the spicy oak and elegant tannins to knit together well and the result is a beautifully balanced wine with tremendous depth and length. This wine is a blend of 90% Cabernet Sauvignon and a touch of 10% Merlot from the Clare Valley here the varieties were matured separately in barriques, of which 35% was new French oak, for 18 months.Mount Horrocks Wines is operated by proprietor/winemaker Stephanie Toole, who restricts production to approximately 4,500 cases per annum in order to achieve her aims of quality and single vineyard expression. Description: The history of Bodegas Pinord can be traced back to the time when, over one hundred and fifty years ago, the Tetas family began making white and red wines on their estate in Sant Cugat Sesgarrigues from grapes they themselves had grown. Even at that time they produced and aged the wines using the most traditional methods employed in the region. In 1942, José María Tetas set up the current winery in Vilafranca del Penedès, just four kilometres from the original estate. Having inherited the family methods and traditions, it has gradually grown until it has now become one of the most highly reputed wineries in the region. Clean, dark mahogany in colour with reddish-brown overtones this wine has an extremely intense bouquet reminiscent of the casks in which the wine was aged, as well as certain vanilla hints and spices such as black pepper. These aromas mingle with those of the Cabernet Sauvignon variety to create a very special personality. The Cabernet variety can be appreciated much more in the mouth, although this highly characteristic taste is somewhat softened by the 14-months ageing period in oak casks and the further two years ageing in the bottle. Jackson Wine Estates STONESTREET Cabernet Sauvignon Alexander Valley California
Description: J. Stonestreet & Sons Vineyard & Winery began in the autumn of 1989 when Jess Jackson purchased a small vineyard and winery in the rolling hills bordering southern Alexander Valley. He named the winery in honor of his late father, Jess Stonestreet Jackson, and dedicated it to the task of handcrafting wines using traditional methods while showcasing modern techniques. Stonestreet quickly garnered international acclaim for powerful red and luscious white wines. Following this early success, Jess Jackson acquired the nearby Alexander Mountain Estate in 1995 and focused Stonestreet on mountain wines, particularly the Bordeaux varietals of Cabernet Sauvignon and Merlot, in addition to small amounts of Chardonnay and Sauvignon Blanc from older vineyards on the mountain. Retaining the intense mountain flavours and colour from mountain fruit demands special care. A pre-fermentation cold-soak extracted fruit flavours while minimising tannin extraction. Separate lots were then fermented at warm temperatures with either native or cultured yeast for a total of about three weeks total skin contact time. Ageing was done in thin-stave French oak barrels, coopered to Stonestreet's specifications. This served to further integrate tannins and fruit while maintaining a balanced structure. A regimen of quarterly racking with light aeration and egg white fining naturally clarified the wine and further developed the nuanced complexity and supple tannins. This wine is well-balanced with a particularly lush mid-palate and dark ruby-purple colour. An elegant structure supports layers of spicy blackberry/cassis fruit along with hints of chocolate and coffee. (12 x 75 cl)
