Description: The Particular wines are made from grapes selected from the best and oldest vineyards owned by Valentin Bianchi in San Rafael. This ‘Particular’ Cabernet Sauvignon has a good intensity, with deep colour and attractive perfumes of red fruits, particularly blackcurrant and plums. Full-bodied on the palate, with ripe tannins rounded out by the addition of the plummy Merlot and Syrah , this wine has nicely balanced oak and fruit, with a long finish. The Bianchi family winery was founded in 1928 by Italian immigrant Valentin Bianchi and now covers 350 hectares of vineyard. It is run by the third generation, headed by Enzo Bianchi. Description: TASTING NOTE The philosophy behind this wine is to combine the sweet, ripe and fruity character of Malbec with the spicy, black fruit flavours of Syrah. The result is a pleasant, sweet, aromatic wine which is highly palatable, with an excellent concentration and body. Grapes are sourced from 12 and 20 year old vineyards in Agrelo, grown at an altitude of 1000m. The grapes are handpicked and then fermented in stainless steel tanks with selected yeast. WINEMAKERS NOTES Following 100% malo-lactic fermentation the wine is blended after the first racking to help marry the varietals.
