A blend of 45% Primitivo, 45% Negroamaro and 10% Malvasia Nera, is supple and juicy, conveying in a glass the instant warmth of Salento. The Rosso Salento has good colour and a chunky fruit with notes of plum and raspberry. Following cool fermentation to preserve and enhance the fruit flavours, the wine is matured in French oak to give a subtle spicy oak character together with a measure of complexity and elegance on the palate. The Promessa wines are created by Mark Shannon and Elvezia Sbalchiero, the duo behind A Mano. They have both worked in the wine business for most of their lives. Elvezia is a northern Italian wine-marketing expert and Mark is a Californian winemaker. With Promessa, Mark seeks to capture the pure flavours of Puglia's grapes in the bottle.

Affectionately known as the Prince of Southern Italian Winemaking, Garofano is Italy's top authority on the grape varieties of Italy's south and a champion of southern Italian winemaking. This is a blend of Negroamaro 80% with Montepulciano 20% and is the result of a long experimentation to obtain a modern style wine which nevertheless expresses its origins to the full. The must is fermented together with the skins for a protracted period, during which skins are constantly broken up and kept immersed in the must. Fermentation is activated with cultured yeasts and temperature controlled. After the malolactic fermentation the young wine is matured in barrique to obtain perfect integration of ali its aromas and flavours. A full, bright ruby coloured wine showing lightly amber at the rim.
