Description: The Adelaide Hills Chardonnay is soft gold with a hint of green colour in the glass. Aromas of grapefruit and nectarine develop into a full, rich, yet elegant palate with varietal chardonnay flavours, a complex creamy texture and long finish. VITICULTURE The Adelaide Hills rise from an elevation of 400m and are a full two degrees cooler in summer than the Barossa Valley. The region also boasts a variety of soil types and misty wet weather during spring that prevents excessive fruit set. The fruit for this wine was sourced entirely from the Adelaide Hills. The vineyards used best display the qualities of this unique cool climate region; small yields of exquisite fruit, with all the finesse of the world’s best chardonnay. WINEMAKING The fruit from each vineyard was separately fermented with a combination of wild and cultured yeasts in new French oak. A portion of the wine underwent malolactic fermentation and lees stirring to add richness, complexity and mouthfeel to the wine. The individual vineyard parcels were then matured in French oak prior to final blending. The wine remained unfiltered until bottling, and was then bottled under screwcap to ensure freshness and preserve the characters of the wine. CELLARING The screwcap closure ensures the freshness and character of the wine is preserved and enables upright cellaring for longer periods. This wine is enjoyable now but will continue to improve with careful cellaring for years to come. (6 x 75 cl)

Description: Since its inception, the Francis Coppola Diamond Collection has been an expansive endeavor to create consistently high-quality wines that are pure expressions of each varietal. They sought out vineyard sites across California, which would ensure superior grapes year-after-year, and employ precise winemaking techniques to showcase the true character of the fruit. The Chardonnay grapes were sourced entirely from distinctive vineyards in Monterey. One, near the Gabilan Mountain range, is comprised of loamy sand, which offers ideal drainage to produce grapes with tremendous flavour concentration. A second vineyard, located in Arroyo Seco, benefits from its valley floor position where its relatively cooler temperatures are perfect for growing Chardonnay. This wine is produced by pressing whole clusters where fermentation is split between barrel fermentation in French oak and stainless steel-tank fermentation. The former is followed by secondary malo-lactic fermentation that contributes a creamy texture in this 100% Chardonnay. The latter is used to retain a crisp acidity and supplies a vibrant citrus essence on the finish. Golden sunshine in appearence the tropical fruit aromas mingle with pears to give this well made wine character. 'Winemaking and filmmaking are two great art forms that are very important in the development of California. They both start with raw ingredients-in the case of wine, the land and the grapes, and in the case of film, the script and the actors' performances. The winemaker takes these raw materials and ferments and blends. He says yes to this batch, no to that one. The director does the same thing: a series of yeses and nos, from casting and costuming to edits and sound mixes. Palliser Estate have found that even over the relatively small area they cultivate, there are great differences in soil types and climate which all help to add complexity to the wines it crafts. The Pencarrow range is the second wine of Palliser Estate. Under this label Palliser are able to experiment with the grape to develop new wine styles from traditional varietals. The wine was fermented in a mixture of American and French oak barrels. It remained on lees in cask for seven months with 10% of the wine spontaneously fermented with wild yeasts. Care in the winery has produced a very attractive nose of ripe stone fruits and floral characters with a hint of sweet oak and creamy notes. The palate shows delicious mouth feel, full of ripe fruits, and is beautifully textured and smooth right to the finish. (12 x 75 cl)

Description: The Contessa Entellina zone was given DOC status in 1994. The region enjoys temperate winters and summers marked by substantial fluctuations between daytime and night time temperatures, which assure the production of wholesome grapes that are perfectly ripe and rich in aromas. This wine is called Mille e una Notte or Thousand and One Nights. The wine label designed by Gabriella Anca Rallo captured this image with the sky dotted with stars while the palace on the label is that of Santa Margherita Belice. Harvested in September, the grapes are vinified in stainless steel at 26-30ºC and with skin contact of about 12 days. After malolactic fermentation, the wine is placed in mostly new French-oak barriques for 15-18 months, while bottle fining takes at least 12 months. A wine with a big structure and a remarkable personality not only does it have great depth and complexity but also ripeness and richness of texture. (6 x 75 cl)

Description: Founded in 1972, Joseph Phelps Vineyards is an independent, estate-based winery located outside of St. Helena. Perched on a knoll in bucolic Spring Valley, the graceful redwood winery overlooks vineyard-studded hills, the town of St. Helena and the Mayacamas Mountains to the west. Long known for his innovative spirit and passion for quality, Joe Phelps pioneered a number of 'firsts' in the early years of the winery. The 1974 Insignia — released in the spring of 1978 — was the first Bordeaux-style blend produced in California under a proprietary label. The release of the 1974 Syrah in 1977 sparked industry-wide interest in a remarkable French varietal whose plantings in California had disappeared and been virtually forgotten for over half a century. And in 1990, after years of research, a whole new family of Rhone-style wines was introduced which today includes Syrah, Viognier and a Chateauneuf-du-Pape style blend called Le Mistral. This Red is a blend of 100% Cabernet Sauvignon from the estate-owned Backus Vineyard in Oakville. Once the grapes were harvested at an average 24.5o Brix, they were fermented in stainless steel tanks, and aged 23 months in new French oak barrels before being bottled. The first Backus Cabernet Sauvignon was produced in 1977 from a 6.75 acre parcel leased from Marian Backus, and even then Phelps believed this steeply-terraced hillside vineyard with its brick-red soil was capable of producing outstanding wines. Subsequent vintages, especially during the 90’s, confirmed their belief, and when the entire 45-acre parcel was offered for sale in 1996, Joseph Phelps enthusiastically bought it. Extremely balanced, concentrated and flavourful fruit were used in this Cabernet Sauvignon. Showing trademark flavours of chocolate, berry and mineral, its silky texture and, perhaps most distinctive, powerful, sweet tannins deliverr through to the finsh. (6 x 75 cl)

Description: Coro Mendocino is a unique collaborative effort by Mendocino winemakers to create a class of ultra-premium wines that showcase the rich heritage and unique characteristics of Mendocino County. Coro means chorus in Italian and Spanish and is reflective of the spirit of this project... many voices singing the same song. This is the first time in U.S. history that winemakers from a region have set blending and aging parameters for a wine distinctive to the area. Zinfandel is the dominant varietal of Coro Mendocino, which also have at least one year in barrel and six months in bottle before release. Made entirely in Mendocino County and exclusively from Mendocino County fruit, these wines share a uniform bottle and label employing a special trademarked logo. What makes this wine stand out is that not only are the varietals named, but the methods of winemaking are regulated from the amount of alcohol to the final pH and TA. Only Mendocino fruit can be used and zinfandel must make up from 40 to 70 percent of the final wine as well as be the dominant percentage. The wine must be totally produced at a Mendocino County bonded winery. On the nose there are hints of Allspice, ripe berries and a floral quality reminiscent of violets. The blend assigns each varietal a role. The Zinfandel provides distinctive aromas, the Petite Sirah and Syrah offer texture and rich flavours, while the Grenache Noir sprinkles a wonderful array of aromatics. In the mouth there is a distinct licorice and anise character with blackberries and juicy, jammy ripe fruit evident. (6 x 75 cl)
