Description:
Located on the 'Cote Pavie', the southern slope of St Emilion's steep hillside, the vineyards of Pavie-Decesse have outstanding sun exposure. The vines sink deep into the clay-limestone soil, which helps to produce the wine's wonderful bouquet. The vineyards are quite small in area and yields are quite low, about 30 hectolitres per hectare. Pavie Decesse is powerful, elegant, deep-coloured and has a wonderful, fruity bouquet. Laurent Lusseau manages the estate and makes sure that work in the vineyard is done carefully, according to tradition. No chemical herbicides are used. In the summer, bunches of grapes and vine leaves are thinned out to produce small crops of very ripe grapes. The wine is fermented in temperature-controlled vats, with grapes from each vineyard plot kept separate. Chateau Pavie Decesse is exclusively aged in new oak barrels. 100% new barrels. Ferdinad Bouffard brought Pavie back to full production after the phylloxera crisis in the late 19th century. The average age of the vines is 40 years, and they are planted on a steep slope which climbs to 90 metres altitude. The cellars were formerly quarries going to 10 to 17 metres underground. There are even vine roots growing down through the limestone ceiling! ChateauPavie is a soft and elegant wine, full bodied and well balanced. The bouquet is quite unique and the tannin perfectly integrated. In barrel, including 40% new barrels. Chateau Moulin Saint Georges Saint Emilion
Description: Chateau Moulin St Georges has been referred to as a junior version of Chateau Ausone as it is owned by the same proprietors, the Vauthier family. Its 17.3 acres of vineyards are located between those of Ausone and La Gaffelière and are well-sited on a south-west facing slope, known as the Pavie slope. The vineyards are planted with Merlot , Cabernet Franc and Cabernet Sauvignon . The vines are expertly cultivated by Vauthier who firmly believes that a wine's quality is first and foremost a function of the vines and the fruit they bear. Consequently, yields are kept deliberately low and the grapes exclusively hand-harvested. Winemaking takes place in temperature-controlled, stainless steel tanks and the wine is then matured in 100% new oak barriques for 15-20 months. The wines are bottled unfiltered.
