The blend comprises about 56% Pinot Noir, about 28% Chardonnay and about 16% Pinot Meunier. The glorious sweetness of Demi-Sec derives from a weighty dosage of sugar mixed with reserve wine. This is added during dégorgement, after the second fermentation, producing a more soft and supple balance but always retaining the freshness so essential in a sweet wine. The wine is bright and clear, a rich yellow colour with golden shades, with a persistent and delightful sparkle.
