Domaine Jean Pillot Chevalier Montrachet Grand Cru
Description: Jean-Marc Pillot has recently taken over from his father, Jean, at the family owned domaine. While able to draw on the experience and advice of his father he has made changes to the estate, including a new cave, that have propelled the domaine up the league of premiere producers of wine in Burgundy. Equally capable of producing great white or red wine the style is always intensely fruity, graceful, and precise. With white wines dominating the 10 hectare domaine the vineyard holdings are spread throughout the village of Chassagne with subsidiary parcels in Puligny, Santenay, and Remigny . The vines in most parcels are between 25 and 50 years old. Traditional viticultural practices are used in the vineyards where, Cordon de Royat and Guyot Simple pruning and training systems are employed. The whites are fermented 12 to 18 months in barrel, never using no more than 25% new wood so as not to overwhelm the intensity of fruit and sense of terroir specific to each wine. Bâtonnage is practiced to enrich the whites but is not exaggerated while the wines are manipulated as little as possible and are bottled unfiltered to preserve their purity. Quantities of this wine are strictly limited with aromas of peach, smoke and minerals it is fat and full with great presence, but quite dry and sappy, with excellent balancing acidity. This is an intense wine and has terrific chewy texture and a very spicy finish.

Highly aromatic nose that combines confectionery fruit notes of lemon cream, apricot and banana with hints of lees and sulfides. This is a wine that reflects its terrior, extremely rich and dense this is a Chardonnay that really fills the mouth with a velvety and dense middle but light on its feet, with sharply delineated grapefruit and pineapple flavours. Clos Des Cazaux LA TOUR SARRAZINE Gigondas
Description: The domaine was founded in 1905 by Gabriel Archimbaud and is now run by Maurice Vache and his two sons Jean-Michel and Frederic. The Archimbaud's and Vache's are among the longest established families in Vacqueyras. The Estate is part of a property dating back to the 12th century and belonged to 'Les Chevaliers de l'Ordre des Templiers'. Additionally, on the property sits an ancient Moorish ruin, the Tower of Sarrazine after which this wine is named. Today, this highly rated property now owns 25 hectares in Vacqueyras and 15 hectares in Gigondas. The Gigondas vineyard is very stony and low yielding while the vines are between 30 and 50 years old. The vines planted are 60% Grenache, 30% Syrah and 10% Mourvedre and the annual production is only 8,800 to 10,000 cases and therefore this wine is produced in limited quantities. Gigondas Tour Sarrazine is a blend of 80% Grenache with some Syrah and Mourvedre with longer ageing before release. It shows great richness with a developed flavour of spice and dried fruits, very long and supple in the mouth. (12 x 75 cl)
