Dopff au Moulin CUVEE JULIEN Cremant d'Alsace Brut
Description: It was in the XVIIth century that Jean-Daniel Dopff, a minister's son, settled in Riquewihr as master-baker and innkeeper under the sign of The Stag. His son, Balthazard-Georges, born in Riquewihr in 1667, became master cooper and was thus the first to associate the name of Dopff with the wine professions. Four generations of Dopff succeeded each other in this line until Jean Dopff, two centuries later, took up the profession of 'gourmet', that is to say a wine merchant under oath. His son Jean Gustave took over the job, in his turn and dedicated himself to the task of building up the family domain. The Dopff enterprise was thus founded, and its history, closely linked to that of Riquewihr and its vineyards, was just beginning. Today, 3 generations manage the Dopff's estate: Pierre Dopff, the Managing Director, his son Pierre-Etienne, General Manager, and Etienne-Arnaud, Logistic and Development Manager, who was appointed at the beginning of the 1998 harvest. The temperatures of September and October play a major role in selecting when to harvest. The grapes become soft and ripe and the rate of sugar increases quickly, while the grape loses its acidity so the wine grower supervises the ripening cycle attentively. Teams of grape-pickers storm the vineyard. The ideal harvest starts in October. However a beautiful Autumn will perhaps allow gathering in November or December, qualities like Vendanges Tardives or even Sélections de Grains Nobles . Wine growers, first and foremost, Dopff uphold the rigourous ethics of their profession, which means that only natural wines from the best grapes are produce under their name and that they are lovingly tended following the traditional methods. Champalou CUVEE MOELLEUSE Vouvray
Description: Catherine and Didier Champalou are young growers in Vouvray who, since 1984 have assembled a small domaine with vines averaging 25 years, planted solely with Chenin Blanc. The aim is to bring out the maximum expression of character from the grape while reflecting the different terroirs on which the vines are planted. Thus by applying rigorous standards, they have created one of the most exciting wineries in Vouvray. Didier Champalou's 19ha vineyard produces exceptional wine almost every year. This dessert wine is made from 30 year old Chenin Blanc vines and the botrytised grapes are selected by hand during mid-October. After pressing and racking, fermentation takes place in oak casks to allow the wine to develop more elegantly, while the bottling took place in May. Inevitably, yields are restricted due to such practices. La cuvee Moelleuse is a golden colour and is already developing more rounded and rich characteristics. It has a wonderfully intense nose of honey and apricots which is echoed on the palate and all underscored by a wonderfully vibrant fresh acidity. (6 x 75 cl)

Domaines Schlumberger CUVEE CHRISTINE Gewurztraminer Vendage Tardives Alsace

Bellavista GRAN CUVÉE PAS OPERÉ Methodo Franciacorta Sparkling Wine DOCG
Description: From a selection of vines at least 20 years old. It needs to mature five years in the cellar. Straw yellow colour with a white intense and lively mousse. The bubbles are fine and long lasting. The nose is intense and elegant. The palate is full and long with a lively backbone behind its richness. Entrepreneur Vittorio Moretti’s success in the building industry allowed him to indulge his passion for wine in the creation of a small estate. It began virtually as a hobby, but over the years it became the focus of Moretti’s work. With the gifted enologist Mattia Vezzola at the helm since 1980, Bellavista now produce wines of real finesse and individuality. The 50 hectares of vineyards are cultivated according to organic principles, and planting densities are high in order to limit yields per vine. In cellars carved into the hillside above Lake Iseo, vinification reflects both avant garde techniques and many of the traditions of Champagne. Long ageing on the lees in bottle is "de rigueur" for the sparkling wines, and the barrique is employed with great subtlety. For the Franciacorta wines, 40% of the juice is barrel-fermented. The resulted house style is characterised by an elegant balance, classy yeasty nose, a very fine perlage and persistent mousse (6 x 75 cl)

Bruno Paillard Premiere Cuvee Brut Reims Champagne
Description: Bruno Paillard is charming and urbane. His house style is supremely elegant with minerally finesse and of consistently high quality. A blend of Pinot Noir , Chardonnay qnd Pinot Meunier has produced a golden straw colour that reveals a high presence of Chardonnay and the exclusive use of the first pressing. The fine and smooth bubbles are due to a strict selection of the best grapes, a perfectly controlled temperature in the cellar and a very long ageing. The first aromas reveal the citrus fruits of Chardonnay like lime and grapefruit. Then the red fruits aromas of Pinot Noir appear like red-currant, raspberry, morello cherries. While opening in the glass, the wine shows hints of dried fruits, sometimes exotics from Pinot Meunier. Lively entry thanks to a low dosage, the nose is confirmed in the mouth. First flavours of citrus, almonds, toasted bread very soon joined by red-currant jelly but also dark fruits like cherry, fig and blackberry. While opening in the glass, getting warmer, the wine expresses light plum and pear flavours. The mouth is full, quite long with a very clean finish. Elegance, complexity, this wine is the exact translation of the Bruno Paillard style. (12 x 75 cl)
